It all began in the early 1980s when a Taichung tea shop Chun Shui Tang 春水堂人文茶館 ( the rival origin myth credits to a Tainan tea shop Hanlin Tea Room 翰林茶館) started to serve tapioca balls in milk tea. Known locally as “Q” or “QQ” for their bouncy and chewy consistency, the addictive tapioca balls (aka pearls) was already a common topping for desserts like shaved ice throughout Taiwan while milk tea was also a favorite local drink. When the two were combined, Bubble Tea became an instant success and since then has taken the world by storm. With over 21,000 boba shops in Taiwan and thousands more around the world, boba has now evolved into a broad category of chunky drinks with various genres.
