“先生，您的爱尔兰咖啡。” 女侍者放了一张圆形的纸垫，白色的纸上同样也长着三瓣绿色叶子。
她小心翼翼地把咖啡从托盘里拿下，放在圆形的纸垫上。
“请不要搅拌哦！而且要趁热喝。不过要小心烫嘴。” 她微笑着交代，把托盘收进左手腋窝。
我愣了一下，在开口想问为什么前，她又叮咛：“记得哦。” 其实她根本不必交代，因为她没给我汤匙之类的搅拌棒，我也不会笨到用舌头伸下去搅一搅。
我端详着这杯咖啡，果然是用类似葡萄酒杯的杯子装着，不过杯脚较低，杯身也较为丰腴。
这是玻璃杯，不是一般的陶瓷咖啡杯。
杯身仍然印上三瓣绿色叶子，并清楚写着：IrishCoffee。
我想这应该是只属于爱尔兰咖啡的专用杯。
最特殊的是还有两条金色的线，一条靠近杯底，另一条接近杯的上缘。
咖啡刚好切齐上面的金线，然后再浮上一层厚厚的鲜奶油。
我端起“酒”杯，浓热的咖啡夹杂着一股异样的香气，穿过冰冷的鲜奶油，咖啡便不再烫嘴，缓缓地入喉。
没多久，温热的感觉从腹中烧热了全身。
没错，是酒精的作用。
咖啡本身的香醇加上酒香，产生独特的香气。
一般咖啡加美酒，你仍然可以轻易分别出这两种截然不同的味道。
但爱尔兰咖啡巧妙地融合了这两种味道，你无法分辨出是咖啡中有酒，还是酒中有咖啡。
喝完这杯咖啡，身上的湿冷早已不见，微醺而温暖的感觉涌上心头。
好像在冬夜刚洗完澡后钻进被窝的那种温暖。
在湿冷而狼狈的夜里，温暖的感觉是非常昂贵的奢侈品。
只是一杯咖啡啊！却让我觉得人生这样就已足够，不必再更好了。
我不禁感激吧台内那个煮咖啡的女孩，还有发明爱尔兰咖啡的人。
那对年龄不相称的情侣刚好起身结账，牵着手准备离开。
他们连身高也不相称，男的需低头走出这家店，女的跳到死也碰不到门楣。
刚刚忘了注意这家店的打烊时间，所以我猜想我是否也该走了。
虽然还耽溺于这种温暖，虽然外面又下着雨，虽然离坐车还有一些时间，我还是走向吧台。
“你再坐一下吧。外面好像又开始下雨了，你会淋湿的。” 女孩洗着杯子，转过头温柔地说。
“不是快打烊了？” “两点半才打烊，还有一小时。” “嗯，谢谢。希望不会打扰你。” “咖啡虽然有价格，但坐在这里的时间却无须付钱。”女孩洗完了杯子，把手擦干，笑着说，“不是吗？” 我在吧台边坐下，拿起这家店的名片，端详一番。
“你不是台北人吧？” “你怎么知道？” “台北这几天常下雨，但你出门却没带伞，所以你应该不是台北人。” 女孩的言谈，透着一股自信。
“也许我开车啊。也许我把车停在巷子外，然后走进来啊。” “从巷口到这里，来回要花六分钟。你为什么不打伞呢？” “因为我懒，而且雨也很小啊。” “对别人来说也许有这种可能，但你不同哦。” 女孩也在吧台内坐下，手肘撑住吧台，双手托腮，微笑地望着我。
“哦？为什么？” “你不会冒六分钟内可能被雨淋湿的风险，因为你是谨慎而细心的人。” “细心？谨慎？” 看来不仅爱尔兰咖啡吸引了我的好奇心，连这女孩也是。
“你进门前，会先看门把上方的字。看到‘推’，你才推门进来。” 女孩像打太极拳般做出推门的动作。
“进来后，你再把门轻轻地放回，所以你很细心。” “然后呢？”我微笑着问。这是我搭不上飞机后，第一次展露笑容。
“吧台边有四个位置，你单身，却没选择吧台边。” “单身的人不一定会选吧台边啊。”我笑着抗议。
“这是我最大的假设。我猜你因为第一次来，对环境和我都很陌生。” 女孩边说边指着我刚才的座位，“所以你挑了个最保守的位置，离吧台最远处。” 她又笑了笑：“这叫谨慎。” “也许我只是随便挑个位置啊。” “可是你却坐在离门最近的位置，而且面向吧台，这难道不是细心谨慎？” “这又跟细心或谨慎有关了吗？” “是呀！这样你可以看到吧台是否失火，然后以最快的时间逃离呀！” 她说完后，我们终于忍不住同时笑了起来。
“你的观察力真敏锐。”我先停住笑。
“我是胡扯的。”她也忍住了笑，接着说，“其实当我说你不是台北人时，你那句‘你怎么知道’就露底了。” 讲完后，她又笑了起来。
“不过你能掰成这样也很厉害啊。” “没办法，在吧台待久了，总会习惯性地观察客人。”她又看了看我，“你是第一次喝爱尔兰咖啡吧？” “你怎么知道？”我又露底了。
“你看Menu时，在二十几种咖啡中，挑上倒数第三个。” “那又如何呢？” “那是视觉上最不容易引人注意的位置呀。” “嗯。我果然是个细心谨慎的人啊。” 我开始学着她的语调，这逗得她呵呵笑了两声。
“原本我以为你喝过爱尔兰咖啡，但我加威士忌时你却露出惊讶的表情。所以——”她拉长尾音，指着我，“你没喝过爱尔兰咖啡。” “原来是威士忌哦。”我终于恍然大悟。
“我煮的爱尔兰咖啡好喝吗？” “非常棒，谢谢你。真的。” “你知道吗？我最喜欢的咖啡，就是爱尔兰咖啡。” “哦，这么巧。” “还有更巧的。我开店三个月来，你是第一位点爱尔兰咖啡的人哦。” “这家店是你的？你是老板？” “是呀。晚上十二点前我有请个工读生，十二点过后就只有我一个。” “那为什么爱尔兰咖啡要十二点过后才供应呢？” “因为煮爱尔兰咖啡需要全神贯注呀。十二点过后客人比较少，我可以专心煮。” “全神贯注？”我很难想象煮咖啡需要全神贯注。
以前学弟磨好豆子，加了水，电源一开，就可以跷着二郎腿等了。
“嗯。下次你来时，我煮给你看。” “嗯。” 我也不知道还有没有下次，难道再错过一次末班飞机？ “谢谢你，让我喝到这么好的咖啡。”。
我站起身，看了看表，该是她打烊的时候了。
“你是第一位点爱尔兰咖啡的客人，所以我坚持请客。” “这，这不好意思吧。” “没关系。欢迎你再度光临。” 我将一直拿在手中的名片，再看一眼，准备收入皮夹中。
Yeats是个很特别的店名，老板也确实是个很特别的女孩。
Yeats？Yeats？啊？我不禁低声惊呼：“叶慈啊！二十世纪最伟大的英文诗人，也是爱尔兰的文学家和革命家！” “呵呵，你终于知道啦。” 左面墙上的男子画像当然是叶慈，右面墙上的诗句应该是叶慈手笔。
绿色是爱尔兰民族的代表颜色，难怪这家店绿意盎然。
而三瓣的绿色叶子自然是象征爱尔兰的绿色酢酱草。
“我对爱尔兰情有独钟，叶慈也是我最喜欢的诗人。” 她先凝视左面墙上的画像，再将目光转移到右面墙上：“投出冷眼。看生，看死。骑士，向前！” 她似乎悠然神往爱尔兰这个遍地青绿的翡翠岛。

Introduction

序写《爱尔兰咖啡》前一个月，我常常坐夜车往来于台南台北之间。
在夜车上无事可做，很容易将自己逼入一个不得不胡思乱想的状况。
如果睡不着，我就构思《爱尔兰咖啡》的情节。
累了就睡，醒了再继续想。
不管是入睡或清醒，我的眼睛通常是闭着的。
因此我无法分辨，哪些文字是清醒时的产物，哪些又是睡梦中的呓语？我只是依循记忆中残存的爱尔兰咖啡味道，引领我走进爱尔兰咖啡的世界。
第一次喝到爱尔兰咖啡，是1999年。
那时在我住的地方，巷口有一家简餐店。
虽说是简餐店，却有个很不错的吧台，我每次走进这家店，目光都会被吧台上方悬挂的各式杯子所吸引。
因为近，所以我常常来这里吃饭。
如果点了店里的简餐，还可以任点一杯餐后饮料——咖啡或茶。
我不是个喜欢尝新的人，所以总是点蓝山、曼特宁之类较常见的咖啡。
印象中爱尔兰咖啡总是躲在Menu的角落，似乎很怕被发现。
不知道常在外面吃饭的人会不会跟我有一样的感觉，我总觉得在Menu里，常被客人点中的餐或饮料，字体颜色会比较亮；而很少被点中的，字体颜色明显暗淡不少。
这跟后宫妃子的气色一样，很少被皇帝临幸的妃子，气色比较灰暗。
在那家店的Menu里，爱尔兰咖啡住的地方，看来应该是冷宫。
直到某一个下着小雨的冬夜，我从学校冒雨骑机车回来，经过这家店时，索性停下车，进去吃晚餐。
我记得我那天的心情不太好，把安全帽挂在后视镜上的力道很大，机车还因此而稍微晃动了一下。
进到店内，才发现身上有些湿；坐下后，开始觉得冷。
我想我一定冷到脑筋结冻，所以点了一个从未吃过的餐。
选附餐饮料时，也干脆选择完全陌生的咖啡——爱尔兰咖啡。
我对那天吃的东西已不复记忆，只记得我是僵硬着一张脸吃完。
而等待附餐饮料送上来的时间，竟比平时长得多。
正犹豫着要不要直接付账走人时，女侍者端着咖啡走了过来。
“先生，您的爱尔兰咖啡。”她微笑着说，“请不要搅拌哦！而且要趁热喝。不过要小心烫嘴。” 我很好奇，抬起头看了看她，她只是笑着说：“记得哦。” 我只喝一口，便闻到一股浓郁并带点异样的香气。
我是个听话的小孩，而且又担心这杯咖啡冷得快，所以一口气喝光。
喝完后，身上开始又温又暖。
好像已经武功大进，可以马上去解救六大门派围攻光明顶之危了。
我拿起杯子一看，看到两条金线、三瓣绿色酢酱草图案，和“IrishCoffee”的字样。
起身付账前，我突然发觉，我的脸已不再僵硬。
走出店门，拍拍我的机车坐垫，说声对不起。
回去的路上，脑海里涌上欧阳菲菲那首《感恩的心》。
我一共只喝过两次，那位女侍者煮的爱尔兰咖啡。
她第二次端上爱尔兰咖啡时，还是交代了同样的话。
但第三次点爱尔兰咖啡时，端上来的却是一个陶瓷杯子，还附上一根金色的小汤匙。
“这是爱尔兰咖啡？”我抬起头时，发现女侍者已不是同一个人。
“是呀。怎么了？”她似乎也很疑惑。
结账时，我试着问原来的女侍者今天怎么没上班？ “她调到早班去了。”老板娘说，“早上11点到下午6点。” “喔。谢谢。”我没怎么放在心上。
只是提醒自己有空记得在下午时段来喝杯爱尔兰咖啡。
虽然我一向只在晚上来这家店，但隔了一段不算短的日子后，我特地在下午，走进店内想喝杯爱尔兰咖啡。
端上来的，仍然是看起来很贵的精致咖啡杯盘，和一根金色小汤匙。
我怎么也无法说服自己喝下这杯咖啡，于是起身走向吧台询问。
“她已经离职了。”老板娘说，“有什么事吗？” “那个，”我不知道该说什么，“爱尔兰咖啡不太对。” “真的吗？”老板娘似乎很紧张，伸手招来吧台内的女孩。
“我是照她写的做的呀。”女孩从围裙内拿出一张纸条。
我瞥见纸条上写着爱尔兰咖啡的材料：爱尔兰威士忌、曼特宁咖啡、褐色砂糖和专心。
煮法写什么，我就没看到了。
我猜女孩并未认真研究爱尔兰咖啡的煮法，或者她觉得煮法太麻烦，于是直接把所有材料混合。
其实那时我也还不知道爱尔兰咖啡的煮法，只是隐隐觉得不对而已。
之后我仍然常去那家店，偶尔也会点爱尔兰咖啡。
但却从未再看过爱尔兰咖啡杯。
我开始研究爱尔兰咖啡，并尽可能求教任何懂咖啡的人。
每多了解爱尔兰咖啡一分，便越佩服那位女侍者一分。
只可惜对我而言，她除了穿围裙、戴眼镜、绑马尾、总是叮咛要小心咖啡烫嘴外，并无其他印象。
但我脑海里还是可以隐约浮现当初她在吧台内烤杯的情景。
当你知道在世界上的任何角落或各行各业里，总是有人认真而坚持地做着一件看似无关紧要的事情时，你可能也会跟我一样，被感动。
于是我写下了《爱尔兰咖啡》这个故事。
因为在故事中，我形容爱尔兰咖啡是种温暖的饮料，于是很多人也想寻找爱尔兰咖啡的温暖。
但如果你不喝咖啡、不习惯酒，也许喝爱尔兰咖啡对你而言是种折磨。
正如猫告诉狗说老鼠很好吃一样，狗可能会觉得受骗。
我在网络上连载完《爱尔兰咖啡》后，听说台北敦化南路上刚好有一家名为“叶慈”的咖啡馆。
于是很多读者写信询问我，是否就是我故事中所描述的那家咖啡馆？我觉得很巧，就像一个职业杀手在火车上碰见久未谋面的国小同学，而那位同学现在是刑警一样。
如果因此让这家咖啡馆生意太好而造成困扰，我也觉得很抱歉。
很多人认为《爱尔兰咖啡》是我写作过程中，明显的分界点。
我仔细照照镜子，似乎确实是如此。
这么比喻好了，我在《爱尔兰咖啡》之前的写作，像跑步；之后的写作则像爬山。
动笔写《爱尔兰咖啡》的那段日子，正值台湾2000年地方领导人大选如火如荼展开。
每当打开电视时，总是看到子弹乱飞，听见炮声隆隆。
