Book Abstract

餐饮业设置的食品安全管理部门可以是专门成立的部门，也可以是一个构建在各相关部门如原料采购、厨房加工、餐厅服务等基础上的管理组织，由组织中的成员共同行使管理职责。食品安全管理部门一般由总经理、食品安全管理员与厨师长、餐厅部经理等三级管理人员组成。
2.食品安全管理员的设置
《餐饮服务食品安全操作规范》规定：加工经营场所面积1500m2以上的餐馆、食堂及连锁经营的生产经营者应设专职食品安全管理员，其他生产经营者的食品安全管理员可为兼职，但不得由加工经营环节的工作人员兼任。
（二）餐饮业食品安全管理部门和管理员的职责
1.餐饮业食品安全管理部门的职责
《食品安全法》规定：“食品生产经营企业应当建立健全本单位的食品安全管理制度，配备专职或者兼职食品安全管理人员，做好对所生产经营食品的检验工作。”
餐饮业法定代表人或负责人，应提出企业食品安全管理的总体目标要求，督促、协调有关食品安全管理职责部门和食品安全管理员予以落实。
餐饮业食品安全管理部门具体的职责：①食品安全管理的理念、策略和规章制度的制定；②管理措施落实的督促、协调和检查验证；③以文件形式公布规定有关职责的具体划分，以便于操作执行和监督实施；④对采购、储存、加工、服务全过程实施食品安全与卫生管理；⑤对人员录用培训、体检等相关环节实施管理。

本教材以餐饮业生产经营流程为主线设置项目，如采购与验收的食品安全控制、原料库房食品的安全控制、厨房的食品安全控制、餐厅服务的食品安全维护等。每个项目开始扼要交代主要内容、学习目标，并设置2-4个模块。各模块均由能力培养、知识拓展、要点提示等栏目组成，并做到任务引领言简意赅、理论内容通俗实用，使教材形成了以食品安全控制的能力培养为核心，项目导向、模块化设置、任务驱动为特色。为了便于读者掌握要点，理解难点，在编写上力求图文并茂、表格规范、案例助学，并在段落前设置标题，项目后增加模拟性练习等，使教材具有实用性、可读性及便于检索的特点。
