Content Description

本研究的逻辑顺序是：首先对牛肉的消费、肉牛的生产、肉牛的屠宰加工与销售三个主要环节的水平、结构的变化情况进行实证分析；然后对三个主要环节的联结方式与内在机制、三个环节的纵向协作特征、产业链各利益主体的选择行为进行研究。最后利用价值链理论对不同类型的牛肉产业链作用。无论国内还是国外，牛肉产业链都没能像猪肉、禽肉产业链一样形成一个完整的供应链。目前我国大型屠宰加工企业是现代产业链的核心。在与农户的协作中，屠宰加工企业愿意选择养牛大户进行合作，其根本动因在于可以获得最大的利益分配。交易成本是农户选择销售形式的主要影响因素。农户与加工企业合作主要是为了减少不确定性。传统产业链以生产为导向，实行的是成本领先战略；现代产业链以需求为导向，实行的是产品差异战略。现代产业链创造的最终价值明显高于传统产业链，其“战略环节”是屠宰加工阶段。
《中国牛肉产业链研究》的研究特色在于把肉牛业的经济研究纳入产业链的分析框架，从结构和交易成本两个维度研究牛肉产业链。可能的创新在于：①通过对牛肉产业链三个主要环节的结构、水平分析及牛肉产业链与猪肉、禽肉产业链的比较，发现了牛肉产业链纵向协作的基本特征及其内在决定因素。②运用博弈论方法，揭示了牛肉产业链中屠宰加工企业选择行为的动因。③用计量方法对影响农户纵向协作形式选择的交易成本的重要程度进行了测度。④运用价值链理论和方法，对不同质量的牛肉价值链进行了系统分析。

Author Description

王桂霞，吉林省吉林市人。1987年毕业丁吉林农业大学农经系，获学上学位。1990年7月获沈阳农业大学硕士学位，并任教丁吉林农业大学。2000年获Nuffic资助，留学于荷兰瓦赫宁根大学和荷兰农业经济研究所。2002年就读于中国农业大学，2005年获博士学位。现为吉林农业大学经管学院副教授，主要研究方向为畜牧业经济与管理。

者偏好不同的品牌，那么，这些产品具有横向差异。横向差异表示不同消费者对于相同产品的评价不同。若以相同价格出售不同品牌的差异化产品，所有的消费者都会选择同一种品牌，那么，这些产品具有纵向差异。由于屠宰加工企业生产者类型不同，其产品的品牌纵向差异更为突出，其产品表现为低、中、高三个档次。
个体屠宰户和低档的屠宰厂基本采用手工屠宰的方式，屠宰、剥皮、剔骨和取出内脏等工序在常温下进行，卫生条件差，所以他们为城乡大众市场提供产品和服务。个体屠宰户和低档屠宰厂主要利用低档的屠宰牛，如淘汰的母牛和土种牛，有时也购买一些低价的杂交牛。
规模较大的现代屠宰加工企业采用屠宰流水线及排酸、部位分割等先进工艺，检疫严格，生产的牛肉品质好，符合卫生条件，所以他们为高档牛肉市场供应部分胴体；也向中等市场和大众市场提供少量的分割牛肉。这类屠宰厂的活牛来源主要是来自育肥场或育肥专业户的一些质量更高的活牛；多数情况下，这些屠宰厂会与农户签订供牛合同，按照规定饲养、管理和体格标准进行育肥。
食品公司等中档屠宰厂，虽有一些屠宰设备，但由于设备条件差，设备一般不检验，卫生条件差异较大，生产的牛肉品质不高。他们的产品多数都进入城乡的大众市场，但是也为中档牛肉市场提供货源。这类屠宰厂的活牛货源存在较大差别。
