第一章 中药加工概述
第二节 中药的化学成分
中药的治疗效果主要由其本身的化学成分决定，加工方法和贮藏手段可能会引起化学成分的改变。加工方法在后面着重介绍，因此本节介绍中药材的化学成分和常规的贮藏方法以及贮藏中应该注意的事项。
一、化学成分
一般来讲，中药的化学成分是极为复杂的。首先，每一种中药往往含有多种化学成分，但又并不是所有化学成分都能起到防治疾病的效用。根据实践经验，通常将中药中含有的化学成分分为有效成分和无效成分两大类。所谓有效成分是指具有医疗效用的一类物质（即具有生理活性的化学成分）如生物碱、苷类、挥发油、鞣质等；而不具有医疗作用的便叫作无效成分如部分树脂、油脂、糖类、蛋白质、色素等。其次，有效成分和无效成分的划分并不是绝对的，如黄酮类，早年认为是无用的色素，现在则认为是一类很有发展前途的成分；多糖类，以前也是人们所不重视的一类化学成分，现在随着科学的发展，技术的进步，意识到其具有增加机体抵抗力、提高身体免疫力的作用，而受到越来越大的重视。下面就简介一些常见的中药化学成分。
（一）生物碱类
生物碱是广泛存在于生物体中一类含氮的有机碱性化合物，大多数有复杂的环状结构。生物碱有显著的生物活性，是中药中重要的有效成分之一。含生物碱的中药有黄连、延胡索、槟榔等。生物碱大多数有强烈的多种作用，如镇痛、镇静、麻醉、兴奋脊髓、解痉、镇咳、驱虫等。含生物碱的药用植物很多，分布于100多科中，以双子叶植物为多，其次为单子叶植物。
