《食品污染与健康》分为食品污染及其分类，食品污染对健康的影响与评价，食品污染控制与食品安全风险分析三个部分，阐述了生物性、化学性、物理性三种食品污染类型，探讨了因食品污染导致的食物中毒、人畜共患传染病、肠道传染病、寄生虫病等对人体健康的影响，并提出包括监测、评估、管理与交流在内的一系列食品安全风险控制流程。
