Book Abstract

这里显示的数据对那些不太习惯吃米的西方人来说是太多了，但对于那些印度尼西亚人和韩国人或其他习惯每餐都吃一碟米饭的人来说又确实太少了。把食谱稍加改变，用各种方法去实验——我更愿意我是在鼓励人们创造他们自己的菜肴而不仅仅是在教他们按照我提供的方式重做一遍。
食谱分为六个部分。
第一部分主要涉及大米烹饪的基础知识和各种确保您每次都能获得完美效果的不同方法。此外，还为您提供了很多适用于厨房的各种技巧。我在家做米饭的时候，不管数量多少，都更喜欢用电饭锅。而当我在外面的时候，就很喜欢用炖锅来做。不管用哪种锅，效果都是一样的好。
第二部分简单地把大米当作菜肴的配料，那就有很多种了。
第三部分最长。我很难阻止有更多的食谱滑进这一行列，根本就不可能找到满意的方法来帮助打断这个长长的列表：碟饭、开胃食、汤、第一道菜都齐聚这个部分，因为它们都种类繁多以至于都可以单独分几个章节出去了。
第四部分主菜其实才是小问题，它们都可以很自然地分进鱼肉饭、海鲜饭、禽类肉饭、肉类饭和蔬菜饭及严格的素食饭里去。我不希望一般读者把最后一项当成是只针对素食者的。这里所有的素食和严格素食食谱都很有价值，它们包含着我个人非常喜欢的东西，而且与本书其他所有食谱也形成了鲜明的对照。素食者和严格素食者应该也会注意到在本书里有很多他们可以接受的食谱。
从某种程度上，我尽力按照类型来分，或者把相似的放在一组。和其他所有有组织的系统一样，这也会产生反常规和无法进行分类的类型，但总的来说还好。结果并不令人吃惊，地理因素和民族文化是决定人们烹饪的主要元素。
第五部分关于甜米糕和布丁，由大多数我们熟悉的大米布丁食谱组成，当然也有一些已经和最初及演变之后的品种不同的食谱。大米能做成非常美味的甜点，假如在每道正餐前不想要那么多的米制甜食，那也可以当茶点或者代替粗粮做早餐。
第六部分关于原汤、酱汁和调味料，它们在很多食谱里还可作为配料，也可以和其他菜肴直接搭配。
为了方便读者实践，我几乎把现在通用的重量和计量单位都列了出来。
