Introduction

民间草根药膳是指以民间青草药为主，并与食物相结合，在祖国医药学、烹饪学、营养学理论指导下，加工烹饪制作出来的，具有防病治病、养生保健和商品价值，色、香、味、形、养俱佳的美味佳肴。
民间草根药膳在福建民间流传的历史十分悠久，人们通过口耳相传，在一定范围内世代沿袭，是中医药药膳的重要组成部分。和中医药药膳有所不同的是，民间草根药膳所用药物多以当地土生土长的药用植物为主，就地取材，如当地不产的药用植物，基本不用或少用。它的地域性特色非常明显，包含着当地百姓对生命科学和地方植物的独到认知。
民间草根药膳重在滋补强壮和祛风除湿。随着生活水平的提高，人们渴望有一个健康强壮的身体以达长寿之目的，而民间草根药膳有相当一部分就有滋补强壮的作用。人们用一些具有滋补强壮的中草药，加上鸡、鸭、兔、肉、蛋等有情之物及瓜果、蔬菜、五谷杂粮之营养，二者互相作用，相得益彰，对增强体质，预防疾病，促进养生确是恰到好处。山区群众因居处多潮湿，加之劳作辛苦，多患有风湿痹痛之证，民间草根药膳利用当地盛产的祛风除湿、强筋健骨、补肾壮腰之青草药制作药膳，确有简、便、廉、验、安全之效。
从所搜集到的资料分析，民间草根药膳所用青草药的药性相对比较平和，极少用到有毒的药物，即使极个别药物有一定的毒性，但与家畜、家禽同炖、煲、煮，其烹制时间相对较长，这对含生物碱一类有毒植物亦可起到一定的解毒作用。
本书分上、下篇。上篇为青草篇，下篇为药膳篇。上篇收载民间药膳常用青草药109种，书中所介绍的食疗方，有历年来搜集到的资料，也有从各地编印的草药书籍中摘录，但均系民间个人的用药经验，读者在应用时，要注意个体差异，并根据实际情况，因人、因时、因地选用，或在中医药人员的指导下辨证使用，以确保用膳安全有效。下篇收载136种民间草根药膳的基本材料、制作方法和民间效用。本书无论青草篇或药膳篇，均附有实地拍摄的彩色图片。
民间草根药膳虽然有其独到之处，深受群众喜爱，但仍需进一步用中医药学和烹饪学理论来指导、研究、提高、完善、规范，使之更好地为人民群众的健康服务。
