第二节茶多酚的免疫调节作用
免疫是指机体免疫系统识别自身和异己物质，并通过免疫应答排除抗原性异物，维持机体生理平衡的功能。众多疾病的发生发展与机体免疫力低下有关。茶多酚对许多慢性疾病如肿瘤、心血管疾病、糖尿病等具有预防和治疗作用，这与其增强机体免疫力具有紧密联系。茶多酚对机体免疫力的作用已在多种动物和人体模型中得到验证，这不仅在一定程度上为茶的保健养生功效作出科学解释，也为开发以茶多酚为主要功能成分、以增强免疫力为主旨的保健产品提供了理论依据。
一、茶多酚在鱼类和家禽中的免疫调节作用
饲料中添加0.01%～1.0%绿茶提取物能够提高褐石斑鱼（Epinephelus bruneus）血清中溶菌酶和溶血补体活性，增加白细胞髓过氧化物酶含量，在1.0%浓度时血清抗蛋白酶活性显著增强。这表明绿茶提取物能够提高其先天体液和细胞免疫能力。
法氏囊是禽类特有的免疫器官。饲料中添加0.25%茶多酚喂养14天龄健康肉仔鸡，公鸡法氏囊重比对照组增加了69.0%。用含30mg／kg茶多酚的饲料可使肉鸡胸腺指数提高15.8%，脾脏指数提高6.8%，法氏囊指数提高15.4%。此外，含20～80mg／kg茶多酚的饲料使肉公鸡的淋巴细胞转化率提高12.1%～21.0%，肉母鸡提高3.2%～11.7%。这说明茶多酚能提高家禽的免疫能力。
