Content Description

《饮膳正要》为元代营养学家兼医学家忽思慧所撰。全书共分为三卷，收载食物、饮物、料物和禽类等。书中论述了蒙、汉、回、藏等各族群众常用的食物及其营养价值。卷一载有三皇圣纪、养生保健、饮食避忌、聚珍异馔、妊娠食忌和乳母食忌。卷二主要记载了诸般汤煎、食物治病、食物相反、食物中毒的救治等。卷三分门别类选录了丰富的食疗营养天然食品，如米、谷、果、菜、鱼、禽、兽以及料物等，详细叙述了每种食品的性味、功能、适应病症以及有无毒性的内容。
