Book Abstract

自春秋战国至清代，历代药粥理论及方剂散见于本草、方剂、养生、食疗、临床医书、综合性医书中。
粥在人们生活中占有很重要的位置，早在六七千年前的黄帝时代就有“黄帝蒸谷为粥”之说。二三千年前春秋战国时的简帛医书中已有服食高粱米粥治疗蛇咬伤和用加热的石块煮米汁内服治疗肛门痛痒的记载。
汉代司马迁的《史记·扁鹊仓公列传》中，记述用药粥治病的事：“臣意即以火齐粥且饮，六日气下，即令更服丸药，出入六日，病已。”《黄帝内经》中对药粥治疗理论的阐述是“药以祛之，食以随之”。即以药治病，以粥扶正的食治方法。
东汉张仲景的《伤寒论》中有关药米同煮同用的记载，如“白虎汤”“桃花汤”“竹叶石膏汤”等。
唐代孙思邈在《备急干金要方》中专有“食治”一节。其中收集了众多药粥方。唐代昝殷的《食医心鉴》中按病种共列9类57方药粥成方，详细地介绍了每个食疗方的组成、用量、煮制方法、功效等，为后世药粥疗法奠定了基础。
宋代药粥有了很大发展，无论医界、民间都喜欢用药粥来防治疾病，并积累了很多极为宝贵的药粥食治方。北宋文学家张耒在《粥记》中说：“每日起，食粥一大碗，空腹虚胃，谷气便作，所补不细，又极柔腻与肠胃相得，最为饮食之妙诀也。”大学士苏东坡也在《粥贴》中说到：“能推陈致新，利膈益胃。粥后一觉，妙不可言。”官方编纂的大型方书《太平圣惠方》载粥方129个，其中苡仁粥、黑豆粥等一直为后人所喜用。《圣济总录》共收集药粥113个，并分门别类地进行了介绍。
元代宫廷饮膳太医忽思慧，根据多年经验，结合诸家本草及名医方术，写下了《饮膳正要》一书，其中多有滋补强壮、延年益寿和防治疾病的药粥方。这些有效的食养粥方在宫廷中颇受欢迎。温补派的创始人金元时期李东垣，看病用药多主张健脾养胃，故对药粥的疗法颇有研究。他在《食物本草》第五卷中，专门论述了28个最常用的药粥方。
明代的大医学家李时珍，长期走访民间，在总结前人用药粥的基础上，结合自己的临床体会，在其所著之《本草纲目》中对药粥做了专门论述，并选载药粥方62个。明代方书《普济方》中收集药粥方180余个，是明代及以前记载最多的一个。在明开国元勋刘伯温的《多能鄙事》中，在戏曲作家高濂的《遵生八笺》中，在古琴家、戏曲理论家朱权的《膣仙神隐》中，在万历年进士王象普的《二如亭群芳谱》中都或多或少地记载了不同的药粥方。由此不难看出当时应用药粥治病已十分普遍。
在清代，药粥疗法又有了新的进展。黄云鹤所著的《粥谱》一书，收集药粥方247个，是迄今为止发现收集最多的一部。在药粥分类方面，清代也有进步，曹庭栋的《老老恒言》将粥分为上、中、下三品共100方；费伯雄的《食鉴本草》则按风、寒、湿、燥、火、气、血、阴、阳、痰等项目分类，收集粥方29个。
近代许多医家仍在利用药粥治病，并取得很好的疗效。
药粥的作用自古以来食药同源，食物也是药物，药物也可供食用，这是中医学的一大特点。寓治疗于饮食之中，亦食亦养，亦养亦治，真是一举多得。
古人之所以对粥如此偏爱是因为粥可以治病养生。李时珍说：“古方有用药物、粳、栗、粟米做粥，治病甚多。”《医药六书药性总义》说：“粳米粥为资生化育神丹，糯米粥为温养胃气妙品。”据《白飞霞韩氏医道》载：“一人病淋素不服药，予令专啖粟米粥，绝去他味。
旬余减，月余痊，此五谷治病之理也。”粥有如此妙用，难怪陆游在《食粥》诗中叹日：“世人个个学长年，不悟长年在目前，我得宛丘平易法，只将食粥致神仙。”药粥之所以能起到养生和医疗的作用，是因为粥一般以五谷杂粮为原料，经水熬制而成。研究发现，谷类含有人体必需的蛋白质、脂肪、糖类和多种维生素及矿物质等营养成分。经慢火久熬之后，质地糜烂稀软，甘淡适口，很容易被消化吸收。在粥中加入一些药物成为药粥，则治疗作用更强，效果更明显。因为药粥的作用不同于单纯的药物疗法，药物与米谷同煮成粥，既具有营养价值又具有防病治病、保健强身及延年益寿之功效，故可谓药借食力、食助药威。
