东京·惠比寿的日本料理店 “赞否两论” 的店主。在“正月屋吉兆”学习9年后，继承了老家位于武藏小山的名为“鸟将”的烤鸡肉串店。2004年，开了自己的店，并命名为“赞否两论”。一瞬间就变成了很难预约的人气店铺。除了在电视的料理节目和料理教室、杂志等中十分活跃外，2013年9月，在名古屋开了第二家连锁店“赞否两论名古屋店”，不断拓展着他的事业领域。现在，大家公认他为料理界被寄予厚望的料理人。

我喜欢盖饭。
没有任何理由地喜欢。
“今天午饭吃什么好呢？”

还有，今天要怎么拿下这碗盖饭呢（是慢慢品尝呢，还是快速吃下呢）？这样左想右想地吃盖饭也是我非常喜欢它的地方。
咸菜是在盖饭吃到一半的时候吃呢，还是菜、饭、咸菜、味噌汤，一个一口，搭配平衡地吃呢……
我一边暗自得意地冷笑，一边制订那一天的作战方案（采取哪种吃法）。
正因为盖饭的吃法很单调，自己去思考独特的吃法的过程才变得格外有趣。
对于盖饭，我有着“盖饭应该是这个样子的”一贯主张。
“因为在吃盖饭的时候时间非常紧迫，所以在选择食材的时候就选择比较大的东西和带骨头的肉吧！”这样的想法是绝对不可原谅的。
