曾經在連鎖速食餐廳擔任高階主管秘書的Vicky，十多年前，因為女兒罹患血癌，當時的她只有三歲，在照護女兒全力抗病期間，深覺食物是維持和加強病人體力的關鍵。從那時起，Vicky決心回到廚房，自己料理女兒的三餐。也因此開始注意到市面上許多食品包裝上的成分表，密密麻麻的添加物和讓人一頭霧水的化學名詞──防腐劑、色素、調味劑、香料、乳化劑、黏稠劑、抗氧化劑等。後來發現如果要避免這些化學添加物似乎不是這麼容易，超級市場、便利超商內幾乎很難找到沒有化學添加物的食品。因此，也開啟了Vicky研究無添加食譜之路！

偏愛西式料理的她，也開始學做青醬和果醬。在一次義賣的機會，Vicky用自己栽種的甜羅勒做了青醬，沒想到大受歡迎，自此，全心投入無添加物醬料的世界。並在2014年底，開了一家「無人工添加物」的餐廳－真食‧手作，企圖傳達兩個理念：一是無添加物、健康的食物也可以非常美味；一是連餐廳都可以做到無添加物，那麼，一般家庭一定也可以達成避免人工和化學添加物的目標。因此，店內從餐點、麵包到甜點，全都由Vicky自己研發和製作。並在開店兩年後，獲得了2016國際無添加物協會「Anit Additive Tasty Award」──亞太無添加物美食獎的殊榮。

教你運用35款無添加醬料，變化出不一樣的家庭味

五味透抽：五味醬在調製過程中，需特別注意市售番茄醬添加色素、果糖、番茄濃縮液、增稠劑等問題選擇產品請注意成分表上的標示，或是自製番茄醬。

東坡肉：東坡肉的風味取決於紹興酒，如果找不到二氧化硫殘留的八角和滷包也無妨，可以直接省略不用。
