Come to the plate of saliva chicken appetizer~

My family's most frequently made appetizers and cold dishes!


Ingredients:

Some chicken thighs, ginger, green onions, peanuts, cooking wine.


Sauce Ingredients:

Chili oil, soy sauce, vinegar, sesame oil, salt, sugar, pepper oil.


Step 1:


 

 

 

Put the chicken thighs in cold water and add some ginger slices and cooking wine. You can also add peppercorns, but I will add peppercorn oil at the end, so I won't put them here. Bring to a boil, then turn to medium heat for 10minutes, turn off the heat, cover and simmer for ten minutes. Don't use it for too long, the chicken will be old and tasteless.


My favorite cooking wine is dragon:



 

 



Step 2:


 

 

 

The chicken is transferred to a container and washed with cold water until it is ice-cold. If there is ice, put it directly in an ice-water bath to accelerate cooling.


Step 3:

 

 

 

Drain, remove the bones and remove any remaining hairs.


Step Four:


 

 

 


Cut meat, thin slices are delicious.


At the same time, adjust the sauce: (the ratio according to taste)

Light soy sauce: vinegar: sesame oil: chili oil: salt: sugar: sesame oil = 4:3:1:1 :0.5:0.5:0.5. This is my own favorite mix.



 



At the same time, chop the shallots and smash the peanuts into pieces with the back of the knife.

来盘口水鸡开胃~

我家四季最常做的开胃下饭肉类凉菜!


用料:

鸡腿若干、姜、葱、花生米、料酒。


酱汁用料:

辣椒油、生抽、醋、香油、盐、糖、花椒油。


步骤一:


 

 

 

鸡大腿冷水下锅加入姜片和料酒若干,也可以放入花椒,但我最后会放入花椒油,所以这里就不放了。大火煮沸后转中火10分钟,关火,加盖儿焖十分钟即可。切忌时间过长,鸡肉会老口感会柴。


料酒我最喜欢巨龙:

鸡肉转入容器中用冷水冲到冰冰凉,有冰的直接放入冰水浴中加速冷却。

捞出后沥干,去骨拔余毛。

切肉,薄片好吃。


同时调酱汁:(根据口味该比例)

生抽:醋:香油:辣油:盐:糖:麻油 = 4:3:1:1:0.5:0.5:0.5。这个是我自己最喜欢的配比。



 



同时切葱碎儿,并将花生用刀背儿也砸成碎儿。
