过年好 之 团年晚宴

年夜饭 - 菜色参考 (鸡鸭鱼肉必须要,图个好兆头)

🦐图这么些年都没过过春节,之前都是忙学业工作之余上油管翻看春晚小品。今年春节是二月中,不怎么忙,立马提前请假在家准备年夜饭。


好多人说,在外过年没什么气氛。这气氛嘛,没有的话,可以自己创造啊。每逢佳节倍思亲嘛,佳节不过好,感觉思念更加泛滥得无法承受。


好歹是深圳长大的四川人,老公和他们一家都不吃辣,所以做得比较偏广东菜。往年在国内连续挨家挨户的团年饭吃下来,记忆犹新的不是山珍海味,而是开荤过度导致的不消化感。所以,准备了多种蔬菜来平衡。



水果:大桔大梨


鸡:海带腐竹香菇炖鸡汤

鸭:烟熏鸭腿(做法下面细讲)

鱼:鳕鱼 Cod Fillet,老公一家不会吐鱼刺,鳕鱼做清蒸鱼也是很好吃的快手菜,上桌前一定烧热油浇一层,会更香

肉:腊肉,酿豆腐肉丸,咸烧白,甜烧白

海产:白炽虾蘸酱油

凉菜-

蒜蓉拌莴笋丝

四川凉面(买干制的鸡蛋面就好,加香油自然晾凉,不要过冷水)

凉拌海带

热菜-

苦瓜炒蛋(挑颜色浅的,沟壑较少的不会那么苦)

砂锅火腿花菜煲(略变色就起锅就能保持爽脆)

芹菜炒百合


甜品:桂花酒糟粉圆(自己用糯米粉加澄粉、粘米粉揉能吃到有韧劲儿)

前:甜烧白-颜色是靠炒糖色;后:咸烧白-宜宾芽菜不够,靠芋头来凑还能解腻


过年怎能少了椰树牌椰汁!


芹菜炒百合,一定要去丝才爽快。只放盐调味就能吃到百合的清甜。


拿出你的高压锅!炖20-30分钟可以切一半做凉拌鸡。压60分钟会非常酥软。盐上桌的时候再加。腐竹和海带提前泡开。


酿豆腐:一定要勾芡才能让汤汁更亮。


四川香肠腊肉需要风干,我家没阳台就做不了,熏鸭腿还是可以做的。曼食慢语有教程,但是按她那方子要多熏两次颜色才漂亮。还有,毕竟盐熏会有致癌物质,少放细盐腌过夜代替粗盐可以减少粗盐杂质产生的致癌物。曼食慢语是熏完直接上桌,但是请一定烟熏后风干半小时,把表面擦擦干净,再用清水冲洗干净后上锅蒸。这样可以大大减少烟熏产生的致癌物残留。趁热吃,肉质会更棒。


凉拌菜:盐腌过夜,不用焯水。挤干盐水就很爽脆。大量放蒜,我喜欢。凉面:盐糖,葱丝/焯水豆芽,大量现焙花椒末(好的花椒末是川菜灵魂)
