新手做汤圆

大家元宵节快乐~🌸🌸🌸

用我刚刚做好的糯米大丸子aka汤圆镇楼。

第一次做汤圆,算是试手,之后会根据这次的经验在调整配方和手法~



准备芝麻馅,芝麻粉是黑芝麻和核桃仁五五分磨成的粉120克,加入40克糖,80克黄油,传统做法好像是猪油,但是我家没有……



糯米粉就是村里买的最常见的那种,用了240



我用的是@说好的炸鸡呢 的揉面方法,40克糯米粉加水揉成团后,放入沸水煮熟,加入剩下的200克糯米粉中,慢慢加水,揉成团。

这个过程感觉很像重结晶,而且好像揉成的面团粘性更好一些




特别提醒,面团一定要用保鲜膜贴着盖好,我只是罩在盆上,面团就干了,然后又加水,加粉,忙了好一阵才搞好……


包的过程没拍,腾不出手来。按照12的比例,10克的馅,20克的粉,但是根据我的成果来看,可以把比例提高,比如11


按照我的用料,一共包了20个大汤圆,剩了2块馅



煮出来变大了好多😂糯米大丸子,味道还是不错滴~
