yami_featured_image 【论“打卤”】—— 我家一向管“西红柿炒鸡蛋的卤拌面”叫“西红柿酱面”而不是“西红柿打卤面”… 因为打卤在我印象里是另一种东西… 这个香菇打卤面的味道有些迷… 很咸,有些酱味,但尝不出来具体是啥… 酱包黏哒哒的,质地很奇怪。吃完后的汤会是油乎乎、黑乎乎的,泛着光,还有一种奇怪的、浓稠的、像是勾过芡的质地… 评论说有种迷之中药味(对其实我是冲着这个去的),但我觉得不像… 听起来很不怎么样👆 于是我给它改造了一下… 既然它说是打卤那我就打个卤吧😂 开水下酱包粉包、剩烤鸡肉、蔬菜、泡好的干货(速食一点可以用开水泡,比较快)。煮到差不多飘个蛋花,勾个芡。出锅👌 面泡开,浇上卤。就可以吃了👌 是不是超级简单👆 那照片是哪个呢? 没放😂 因为我第一次做没经验… 水多了,时间太长芹菜被煮的太软,而且傻逼到先勾芡后飘蛋花,为了搞掉那些水芡汁还太浓了… 然后烧水泡面的时间也没掌握好,所以一锅浆糊在炉子上等了好久😂 于是这个卤长得吧… 一言难尽😂 但是好吃!真滴好吃! 做了一大锅卤之后终于把咸呼呼的酱包抻开了,不再扣扣索索地缩在一个小碗里,酱味完全舒展开,浸透了芹菜木耳和鸡肉(不进味也全做芡汁挂上去了啊),鸡蛋也加了生鲜清淡的味道。 比咸的要死还尝不出啥味的原版泡面不知道高到哪里去… 但有一个问题。就是。面是老式油炸的😂 被市面上各类非油炸养刁了,尤其这次是只泡面再加卤。油炸面糟兮兮的口感和油惺惺的味道全显出来了… 这是直接泡面不会有的问题… 估计在勾芡之前把面饼塞里一起勾会解决问题吧😂 *原版打卤: 1. 酱包粉包换成酱油和盐 2. 鸡肉换成切片五花肉汆一下借味(猪肉味浓);或直接换成肉汤(啥都行,首选猪肉汤或鸭汤,不行再上鸡汤;可以把肉也连带着扔里;推荐自家熬的,罐装肉汤味道有些诡异) 3. 蔬菜踢掉,主要放干货… 蘑菇木耳黄花👌想切可以切,不想切整着扔也完全没问题 然后!就会得到一锅看起来黑乎乎油光光的东西… 但是,好吃到爆炸! 少放点盐白嘴吃都没问题!我是干过抱着碗干喝卤的事的!
