Bin Meal is an old-fashioned Cantonese dim sum, with sweet and savory flavors,

I personally like sweets. In fact, the sweet thin meal is to mix glutinous rice flour and sticky rice flour into a batter, spread it into a thin glutinous rice pancake, then wrap it with filling and cut it into pieces. Salty green onion, shrimp, ham, etc. will be mixed in the dough~


This snack is not difficult to make, but the preparation of fillings usually requires more work, such as sautéing sesame seeds and peanuts separately. But I usually prepare cooked white sesame seeds, crushed peanuts, and shredded coconut, all of which are cooked, so add coarse sugar and mix well to become the filling. It doesn't matter if there is no shredded coconut and sesame seeds, I think only peanuts and sugar are delicious enough!
Crust material: 200g glutinous rice flour, 180g hot water, 35g sticky rice flour (no need to add), 10g sugar
Glutinous rice flour I use Japanese-style glutinous rice flour, the taste is not so sticky, more Q kind.

Add sugar to hot water, then pour into glutinous rice flour and sticky rice flour and stir.


It is best to form a dough that is not sticky but soft, and then spreads out better in a frying pan.



Put a layer of oil in the pan, a thin layer of oil is good, put a piece of dough in the cold pan, the size of the dough depends on the diameter of the pan and the size you want, it is best to start with a smaller one, because it is thinner only delicious.

Press it into a thin layer with a spatula and fry it on a low heat until both sides are slightly browned and you can start the pan!

Then sprinkle toppings with chopped peanuts, white sesame seeds, and white sugar while it's still hot, roll it up, be careful to scald it! I usually use a spatula to help.

If it is thinner and then spread a little bigger, it can be rolled in many layers so that it has a sense of hierarchy. Really give it a try, the ingredients and steps are very simple, and I guarantee that you will love it if you like sticky rice!

【炸鸡厨房】超简易版广式点心---甜薄餐

今天来教一个我好早之前做的点心–甜薄餐。因为年代久远,拍照技术和拍的画质都很差不好意思

薄餐是广东的一个老式点心,有甜的和咸的两种口味,

我个人喜欢吃甜的。其实甜薄餐就是把糯米粉和粘米粉和成面糊,摊成薄的糯米煎饼,然后裹上馅之后切块就完成啦。咸的葱花虾米火腿什么的会混在面皮里~


这个点心做着不难但一般馅料准备工夫較多,要分別炒香芝麻和花生。但我一般准备好熟白芝麻,花生碎,椰丝这几种原料,都是熟的所以加上粗砂糖搅拌均匀就变成馅料了。 没有椰丝和芝麻也没关系,我觉得只有花生和白糖就够好吃的了!
饼皮材料:糯米粉200g,热水180g,粘米粉35g(没有可以不加),白糖10g
糯米粉我用的日式的糯米粉,口感不会那么黏,比较Q的那种。


步骤:

将白糖加入热水,然后倒进糯米粉和粘米粉里搅拌。


和成团,这个粉团最好是不会粘手但比较软,之后在平底锅里面比较好摊开。



平底锅里抹一层油,薄薄一层油就好,冷锅放一块面团下锅,面团的大小取决于锅的直径和你想要的大小,最好开始先用小一点,因为薄一点才好吃。

用锅铲压成薄薄的一层之后小火煎,煎到两面微黄之后就可以起锅啦!

再趁热撒上加了花生碎,白芝麻,白砂糖的馅料卷起来,小心烫哦!我一般会用锅铲辅助一下下~

卷好之后大概是这样滴~当时做的比较丑哈哈哈

 




薄一点,然后摊大一点的话,可以卷很多层这样有层次感。真的试一试,材料步骤都很简单,而且我保证喜欢糯米的你会爱上它的!

还可以做成红豆馅儿的年糕卷,悄悄告诉你们这是我秘密的快手甜品。一般请朋友来家里吃完饭想吃点心,我就做这个。

家里常备着日式红豆馅,只需要准备糯米皮,五分钟就搞定,趁着热乎地吃一块别提多美了!
