【Xiuyang Kitchen】Mapo Tofu

Mapo tofu, one of the representatives of Sichuan cuisine👇It is very appetizing in summer! The sheep have lost their appetite a bit these past two days, so I made Mapo tofu and they were all gone.







Main ingredients:


Tofu, ground beef.


Ingredients:


Pixian bean paste, minced ginger, minced garlic, Yongchuan tempeh, green pepper, chili powder, pepper oil, starch, dark soy sauce, black pepper, sugar.



Cut the tofu into cubes, add salt, boil water, and soak for a while to remove the beany smell. 👆It's hot tofu.


Put oil in a hot pan, fry minced beef until fragrant, add green peppercorns.

Add in bean paste, tempeh and fry until fragrant.

Add minced garlic, ginger, chili powder and saute until fragrant.

Add an appropriate amount of water.



Put in the tofu, stir fry for a while, and pour in the thin sauerkraut.

Add a little dark soy sauce to color, add salt, pepper oil, pepper, and a little sugar to taste. Stir fry for another minute.


Add the thin gorgonians and stir-fry for a minute.


Add in the thin glutinous rice, stir fry evenly and serve.



👇Sprinkle with pepper powder! It would be better if there were garlic sprouts~ I didn't buy them and didn't put them in. The taste is still great~

【秀羊厨房】麻婆豆腐

川菜代表之一的麻婆豆腐👇夏天吃很开胃!这两天羊有点食欲不振,做了麻婆豆腐,一扫光。







主料:


豆腐,牛肉末。


配料:


郫县豆瓣酱,姜末,蒜末,永川豆豉,青花椒,辣椒粉,花椒油,淀粉,老抽,黑胡椒,白糖。



豆腐切块,加入食盐,开水,浸泡一会儿,祛除豆腥味。👆是烫好的豆腐块儿。


热锅放油,油热炒香牛肉末,加入青花椒。

再加入豆瓣酱,豆豉,炒香。

放入蒜末姜末辣椒粉炒香。

加入适量清水。



放入豆腐,翻炒一会儿,倒入薄芡。

放入少许老抽调色,加盐,花椒油,胡椒粉,少许白糖调味。再翻炒一分钟。


再加入薄芡,翻炒一分钟。


再加入薄芡,翻炒均匀即可出锅。



👇撒上花椒粉!如果有蒜苗就更好啦~我没买到就没放。味道还是棒棒的~
