3. Pour in the green peppers, also without oil, stir fry, and stir out the water of the green peppers.


4, stir until the green pepper becomes soft, pour in the boiled eggplant, mix well, and then use a spatula to make a small hole in the middle.



5. Pour cooking oil into the small hole, add Chinese prickly ash, shredded ginger, garlic slices, and saute until fragrant.

【秀羊分享】干煸茄子!Level 3

今天分享的是干煸青椒茄子~

把它分到level 3 时因为步骤比较繁琐一点。

但是!味道绝对一等一的好吃哦!!!

首先准备食材:1.油 蒸鱼豉油 蚝油 

                          2.茄子用刀削成小块(左手拿茄子,右手拿刀,右手每削完一次茄子,左手把茄子转动一点)

                          3. 青椒切小块,青椒少放一些,不然太辣抢了茄子的味道

                          4. 香葱切葱花,俩颗大蒜切片

                          5. 切一些姜丝,少许花椒。



下锅: 1.热锅下入茄子(此时不放油!!!!!)

            2.翻炒茄子,炒出水分。



炒成这样的时候,就可以把它倒出来用容器装上。


3. 把青椒倒进去,同样不放油,翻炒,把青椒的水分煸出去。


4,煸到青椒变软, 倒入煸好的茄子,混合均匀,然后用铲子在中间拨一个小洞。



5, 在小洞中倒入食用油,放入花椒,姜丝,蒜片,爆香。
6, 再混合翻炒均匀,加入适量蚝油,蒸鱼豉油。


7. 炒好倒出来(因为这一次我还准备了牛肉末,所以还要接着炒牛肉)


8. 锅中倒入少许油,倒入牛肉末,这时候牛肉会出水,加入适量蚝油,蒸鱼豉油。
9. 牛肉水汽收干一些,加入刚才炒好的茄子和青椒,混合均匀,尝一尝味道,不够味再加。

出锅啦~~同样的,如果是待客,把菜放在漂亮盘子里,最后把葱花撒在顶上。
