Preparing materials:


Meringue: Egg White85g, caster sugar25g


Sugar Water: Sugar140g, water42g


Put the egg whites in an oil-free, water-free bowl first, then put them in the freezer5About minutes, it freezes until there is ice on the wall of the basin, but there is no ice in the middle. As shown below





Boil sugar first, mix sugar and water, heat on low heat, do not stir, do not stir, it will cause sand. Occasionally shake the pot slightly, then take a food thermometer to measure the temperature, the temperature reaches 118Celsius (245Fahrenheit), do not touch the bottom of the pot with the thermometer, as the temperature will be inaccurate. It takes time to boil the sugar. At this time, you can beat the egg whites. After the egg whites are beaten, the sugar is also cooked.





Add the sugar three times, and beat the egg whites at high speed until they are wet and foamy.






When the sugar is boiled, slowly pour it into the egg whites, beat at high speed, remember not to pour it on the egg beater, so that the syrup and egg whites are evenly mixed. Keep stirring, and touch the outer basin wall with a slightly warmer temperature than your hand. (I didn't take a picture of this step, I really couldn't take it, I did it myself) The state of the meringue is very delicate.







Then you can add food coloring to make the cartoon look you want, or pure white. At this point you can preheat the oven to 100Celsius (210Fahrenheit).













After styling, put it in the preheated oven and bake90 minutes, then turn off the oven, do not turn it on, continue to be stuffy60minutes, after taking it out, it can be easily removed from the greased paper If you take it off, it means it's ready, if it's still sticky, you should continue to bake.

Actually, it was the first time I made cartoon-shaped meringues, and I used to make basic models before.

小盆友的最爱《卡通蛋白糖》




首先说一下,主图和过程都是我之前做的和拍的,我有习惯一边做吃的一边拍。



快到年底了,各种节日接踵而来,会有很多小朋友来家里,可以先提前准备好超可爱的蛋白糖


 


做法很简单,只要你有耐心按步骤走,没问题的


 


准备材料:


蛋白霜:蛋白85g,白砂糖25g


糖水:糖140g,水42g


首先把蛋白放进无油无水的盆里,然后放冻箱冻5分左右,冻到盆壁有冰碴儿,但是中间没有结冰的状态。如下图





先熬糖,把糖和水混合,小火加热,不要搅拌,千万别搅拌,会起沙的。偶尔轻微晃动下锅就可以,然后拿食物温度计测温度,温度达到118摄氏度(245华氏度)即可,温度计不要触碰到锅底,那样温度不准的。熬糖需要时间,这时候你可以打蛋白,蛋白打好了,糖也熬好啦





白糖分三次加入,蛋白高速打发,打发到湿性发泡的状态就可以啦






糖熬好了缓缓分次的倒入蛋白里,高速搅打,切记千万别倒到打蛋头上,使糖浆和蛋白混合均匀。不停搅打,手摸外侧盆壁比手温略高一点就好了。(这步骤我没有拍照,实在没办法拍,自己一个人做)这是的蛋白霜的状态是非常细腻的。







然后你就可以加食用色素做你想做的卡通造型啦,也可以做纯白的。这时候你可以烤箱预热100摄氏度(210华氏度)。













做好造型就可以放进预热好的烤箱啦,烤90分钟,然后把烤箱关了,不要开开,继续闷60分钟,拿出来后可以轻易的从油纸上拿下来就说明烤好啦,如果拿下来还有粘那就要继续烤。

其实我也是第一次做卡通造型的蛋白糖,之前都都是做基本款的。
