市售的黑芝麻粉和椒盐粉都不好用!!椒盐粉就是花椒粉,小茴香和盐1:1:1
开酥的时候一定要注意保湿!只铺一层保鲜膜不大好!最好盖湿毛巾
油酥和和油皮的手感最好一样柔软,不然容易混酥。
可以用猪油,但我比较喜欢把黄油加热蒸发水份以后放凉再用。没有猪油腥味偏奶香。
