The ingredients are only chicken breast, shiitake mushrooms, porridge, ginger and green onions.


 


~Cut the chicken breast into pieces, then chop a few times, add pepper, salt, cooking wine, and cornstarch to marinate. If you don't have salt and pepper, just use salt and white pepper.

~The boiled porridge is diluted with water and boiled, add shredded mushrooms, and boiled ginger slices.


 




 


~Add the minced chicken and mix well.


 


~ The chicken turns white, add salt, and season with a little pepper, then turn off the heat.


 




 


~The chicken will be smooth and tender if marinated in advance with cornstarch.

~For a quick soaking of dried shiitake mushrooms, add shiitake mushrooms, warm water, and a spoonful of sugar to an airtight jar, cover and shake 30seconds. After three minutes, the mushrooms are all soft.

~I will add dried scallops to enhance the flavor when cooking white porridge. It can be thickened and stored in the refrigerator. Just add water when you need it.

~Add ginger slices to remove fishy smell.

~ You can also use the same method to make fish porridge, and you can omit the shiitake mushrooms.

生病好朋友~清淡的香菇雞粥

這兩天換季扁桃體又發炎,飲食必須以清淡為主。簡單的用電飯鍋煮了一鍋白粥,一天兩餐換著花樣的吃。皮蛋瘦肉粥吃多容易膩,今天教一個簡單的雞粥。材料就只用雞胸肉,香菇,白粥,薑跟蔥。


 


~把雞胸肉切塊,再稍微剁幾下,加胡椒鹽,料酒,生粉醃一下。沒有胡椒鹽的直接用鹽跟白胡椒粉就好了。

~煮好的白粥加水稀釋煮開,加入香菇絲,薑片煮開。


 




 


~加入雞蓉,攪拌均勻。


 


~雞肉成白色,加鹽,一點點胡椒調味就可以關火了。


 




 


~雞肉提早醃製加生粉就會滑嫩。

~想要快速浸泡乾香菇,在密封罐子裡加香菇跟溫水,還要一勺糖,蓋好搖晃30秒。三分鐘後香菇就已經全部軟軟的啦。

~煮白粥我會加乾瑤柱提味,可以煮稠一點放冰箱冷藏,要用的時候再加水就好。

~加薑片可以去腥。

~做魚片粥也可以用同樣方法醃製,香菇就可以省略。
