Lantern Festival 🐷 Tangyuan

The piggy dumplings I made last weekend are basically the same as last year's dumplings, but with a little more decoration.

The first step is to make basic dumplings, which are divided into two parts:

1️⃣Sesame stuffing

2️⃣Glutinous rice skin

🌸Sesame filling:

Fry on low heat500g black sesame seeds, which can Smell the aroma of sesame seeds, and the sesame seeds are bulging, it is cooked, do not fry.

grind into powder withcoffee grinderand addcoffee grinder span>50gram sugar,160gram melted lard, stir well.

Then divide into 10grams of small balls, wait for use.

❗️I used less sugar, so the filling is not very sweet, so if you like it sweeter, add more. Lard can also be replaced with butter.

🌸Glutinous rice skin:

240g glutinous rice flour with water and knead until it forms a ball. Take a small piece and cook it in boiling water, then mix it with the rest of the dough and continue to knead until it forms a ball. Such glutinous rice skins🈶sticky, good package.

Separate about20grams and add two drops of red Food coloring, which turns pink, set aside.



 



Then it's ready to pack,15grams of white glutinous rice Skin10g black sesame filling, wrap it in the tiger's mouth, Knead it into a ball, roll it in the glutinous rice flour, and set it aside when it is done.



 



Divide the pink glutinous rice ball into two parts, one for the ears and one for the ears🐽.

Dip some water and glue the ears and nose to the base dumplings. Use a bamboo skewer to make two holes for the pig's nose. Pig eyes can be embellished with red, yellow and blue tri-pigmented black.

❗️This step should be done as fast as possible, otherwise the glutinous rice will be easy to dry, remember to cover it with plastic wrap.

元宵节🐷汤圆

上个周末做的一波小猪汤圆,和去年的汤圆比,基本操作一模一样,但是多了点装饰的部分。

具体过程我手忙脚乱的来不及的拍图,如果不太清楚,可以问我哈~



 



首先是做基本汤圆,分为两部:

1️⃣芝麻馅

2️⃣糯米皮

🌸芝麻馅:

小火炒熟500克黑芝麻,能闻到芝麻香味,而且芝麻变鼓了,就是熟了,不要炒糊。

coffee grinder打磨成粉,加入50克白砂糖,160克融化的猪油,搅拌均匀。

然后分成10克一个的小团子,待用。

❗️我的糖用少了,这样的馅不怎么甜,喜欢更甜的就多加。猪油也可以用黄油代替。

🌸糯米皮:

240克糯米粉加水,直到揉成团。取下一小块放入沸水中煮熟,然后和剩下的生面团混在一起,继续揉到成团。这样的糯米皮🈶粘性,好包。

分出大概20克,加入两滴红色食品色素,变成粉色,放在一旁待用。



 



然后就可以包了,15克白色糯米皮10克黑芝麻馅,用虎口部分包好,揉成团,放到糯米粉里滚一下,都做好后放在一边。



 



把粉色糯米团分成两部分,一部分做耳朵,一部分做🐽

沾点水把耳朵和鼻子黏在基础汤圆上。用竹签给猪鼻子插两个洞。猪眼睛可以用红黄蓝三色素调和成的黑色点缀成。

❗️这步要尽量快,不然糯米很容易干掉,记得用保鲜膜盖好。
