yami_featured_image 🙆🏻‍♀️妈妈的味道·糖醋小排🙆🏻‍♀️ # 复刻妈妈的拿手菜 ## 亚米厨房 # 糖醋小排这道菜 是我8年前刚踏入厨娘界的时候最喜欢做的一道菜 菜谱是我妈n年前给我口述的😂 1⃣️先把买来的小排骨洗净、焯水;再次洗净,锅和排骨都要洗;然后重新换水开煮。 2⃣️这次煮要加入适量的料酒,姜片三四片。大火烧开转小火,焖煮排骨一小时至酥烂(煮排骨的汤汁要留下半碗)。 3⃣️煮好的排骨沥一沥水,然后放入有少量底油的油锅煎至两面金黄,能馋哭隔壁小孩的那种😄 4⃣️排骨捞出,锅里倒些油进去开小火,放入冰糖十几颗开始熬糖。等熬到褐色有小泡泡的时候放入排骨,炒糖色。 5⃣️然后在锅内放适量生抽、镇江香醋,翻拌均匀,倒入半碗排骨汤。转小火焖煮。 6⃣️把水熬得差不多快干了,再倒入一点点香醋提味儿。就可以出锅了。撒上葱花、白芝麻。 7⃣️煮排骨的时候就可以烫好一颗西兰花,出锅之后就可以直接摆拍上菜了🥗 就是这么的简单,之所以用煎的没有炸,是因为毕竟家庭版嘛,这样用油少,健康一些。 想吃的小伙伴,快试试吧👏🏻 谢谢观看🙏🏻
