The Cantonese style mooncake is round, about four inches in diameter, and one-and-a-half inches thick. Different regions have different ways of making red bean paste, but they are all sweet and smooth and have a beautiful dark ruby color. The dark color contrasted by the orange yolk center represents the night sky and full moon.

These mooncakes contain 5 types of nuts and seeds, coarsely chopped, and held together with maltose syrup. They usually contain walnuts, pumpkin seeds, watermelon seeds, peanuts, sesame seeds, or almonds. The Nut Mooncake can be paired with ripe pu’er tea or red Chinese tea to enhance the flavor and aroma.
