Book Abstract

我们日常所吃的食物中的营养成分，主要包括糖类、蛋白质、脂肪、维生素、无机盐和水，除了维生素、无机盐和水可直接吸收外，蛋白质、脂肪和糖类都是复杂的大分子有机物，均不能直接吸收，必须先在消化道内被加工处理，分解成结构简单的小分子物质，才能通过消化道的粘膜进入血液，送到身体各处供组织细胞利用。食物在消化道内的这种分解过程称为“消化”。食物经过消化后，通过消化管粘膜上皮细胞进入血液循环的过程叫“吸收”。食物的消化和吸收需要通过消化系统各个器官的协调合作来完成的，是两个紧密相连的过程。
消化是由消化道来完成的，人的消化道由不同的消化器官相延续而成。消化有两种方式：一种是食物经过口腔的咀嚼，牙齿的磨碎，舌的搅拌、吞咽，胃肠肌肉的活动，将大块的食物变成碎小的，使消化液充分与食物混合，并推动食团或食糜下移，从口腔推移到肛门，这种消化过程叫机械性消化，或物理性消化：另一种是消化腺分泌的消化液对食物进行化学分解，由消化腺所分泌的消化液，将各种复杂的营养物质分解为肠壁可以吸收的简单的化合物，如糖类分解为单糖，蛋白质分解为氨基酸，脂类分解为甘油及脂肪酸。然后这些分解后的营养物质被小肠（主要是空肠）吸收进入体内，进入血液和淋巴液，这种消化过程叫化学性消化。正常情况下，这两种方式的消化作用是同时进行，互相配合的。食物经过消化后，透过消化道的粘膜，进入血液和淋巴循环的过程，称为吸收。消化和吸收是两个相辅相成、紧密联系的过程。不能被消化和吸收的食物残渣，最后以粪的形式排出体外。如表2-1所示。

随着社会的发展，人们对食物的要求也在不断提高，已不仅仅满足于最初的饱腹、维持自身生存的基本条件，而是逐渐向疾病的防治、人体的健康以及通过食物良好的色、香、味、形、质来满足人们不同的嗜好和要求等方面发展。随之，生命科学、营养学等学科应运而生并且迅速发展起来，一些天然的具有特殊生理活性的物质不断得到重视，对于有益于健康的食品成分及饮食与疾病相互关系的研究不断得到拓展。
通过改善饮食条件与食品组成，发挥食品本身的生理调节功能，以提高人类健康水平已日益成为人们的共识。天然的、营养的、具有特殊生理活性的食品也成为健康的最佳选择。由此，食品营养除了提供人类所需的营养素以外又注入了新的内容。
随着人们生活水平的提高，人们的食品消费观念也在进步，尤其是对营养学的基本原理、食品的安全卫生知识、各类食品的营养与保健功能、营养失调与疾病、食品营养与抗衰老等更为关注。为此，普及营养科学知识十分重要。科学技术的普及是提高公众科学素质的关键，营养科学知识的普及有利于提高全民的饮食文化素养、生活质量及健康水平。
