【凉凉掀狗盆之卤猪蹄】

大料粗略看看:八角,花椒,香叶,桂皮,辣椒,之后还用了五香粉。喜欢吃辣的可以多放一些花椒和辣椒,我这锅是给老外同事品尝所以没放太多辣的。


 



亚超买的两盒猪蹄下开水焯一下。确保血水都煮出来了。


 



再用冷水清洗一遍,去掉覆盖表面上的血水和油脂。


 



锅烧热放点油,中火把冰糖融化至褐色(不要黑了,会苦)


 



倒入冲洗好的猪蹄翻炒上糖色。这过程中加入大料和调料。

煮开后转小火,继续盖盖子,但留条缝隙排除水蒸气。这样慢慢炖的过程中,猪蹄就会软嫩,这样直到水几乎快全烧没了的时候猪蹄也是口感滑嫩,不会过硬塞牙缝。这个小火慢炖的过程就是看看剧啦,刷刷手机啦,睡个午觉也是可以的,反正俩仨小时后(具体根据水蒸发的速度决定)差不多了就可以做最后一步收汁工作了。


 



加盐然后翻几下后大火收汁出锅。这样长时间卤出来的猪蹄非常的入味。入口即化,至今为止所有吃过的朋友都说好吃😋还想吃😊
