Abalone is a gift from a friend. The size is medium, but it is more suitable for catching rice. If it is larger, it will be boiled in soup. Fresh abalone needs to be removed from the dark side and internal organs. It is best to use a brush to brush the abalone side by side. Sea cucumbers can be fresh or dried. I use fresh ones. I have always bought fresh sea cucumbers and kept them at home. It is very convenient to thaw them after cleaning. Fish maw is also used as dry goods, and it can be soaked overnight in advance.



















Add all three ingredients in a pressure cooker, add sliced ginger+scallion +Abalone Sauce+Salt, and finally add the previously prepared stock and simmer. Abalone is relatively tough, so it is recommended to press it for a longer time to taste better and more delicious. Fish maw and sea cucumber are both colloids. After opening the lid, the sauce is already viscous. There is no need to add cornstarch to thicken it. After eating it, your mouth will stick and you will not be able to open it.

【鲍鱼海参花胶捞饭】

上次有发过高汤的帖子,现在就跟进一下我的高汤使用菜谱-鲍鱼海参花胶捞饭。听起来名字很长很奢华对不对?没错就是很奢华,因为材料都很贵,所以不能马虎的对待,毕竟失败的成本很高







鲍鱼是朋友去送的,尺寸属于中等吧,但是还比较适合捞饭的,如果更大一点就熬汤了。新鲜鲍鱼需要把黑黑的边还有内脏清除掉,最好拿刷子把鲍鱼边边刷一遍。海参可以用新鲜或者干货的,我用的是新鲜的,我一直有买新鲜海参在家里放着,清理之后解冻完就很方便了。花胶也是用的干货,提前一晚泡开就可以了。



















用高压锅加入所有三种材料,放入姜片+葱段+鲍鱼汁+盐,最后加入之前做好的高汤放入炖煮。鲍鱼比较韧,所以还是建议压得久一点,更好吃更入味。花胶跟海参都是内涵胶质了,开盖之后的酱汁已经是粘稠的,不需要再加入生粉勾芡,吃下去之后嘴巴都黏住张不开了。
