
I stocked up a bag of Korean sweet rice that Yami bought before, and I always wanted to make eight-treasure rice with red dates, but I was struggling to control sugar in order to lose weight, so I thought about holding it back. The quality of this sticky rice is super good, super easy to use. Soaking it in advance is very easy to cook, sticky and not particularly soft, I like it very much! Looking at the glutinous rice that I had thrown into the cold palace on the weekend, I decided to make a 糯米饭 with the dried mushrooms I bought earlier.
Material: dried fungus, dried mushroom, minced meat, glutinous rice, soy sauce
Method: Soak the glutinous rice overnight. Soak mushrooms and fungus for 40 minutes before using, and soak them separately. Chop the fungus, shiitake mushrooms, minced meat, and do not pour the water in which the shiitake mushrooms are soaked. Heat oil in a hot pan and fry minced pork, add fungus and shiitake mushrooms and fry for half a minute after discoloration, then pour in drained glutinous rice, fry for one minute, add soy sauce and salt. Then add shiitake mushroom water until it covers the glutinous rice, don't cover the pot, just let it chug on its own. Wait until the water is almost gone, add another mushroom water (add pure water when the mushroom water is gone), cover the glutinous rice, do not cover the lid and continue to chug, wait until the water is gone, stir fry a little and you’re ready to go! Delicious! The glutinous rice must be soaked in advance, otherwise it will not be cooked.
