一般桃膠要泡水至少12-15個小時,它會發漲10倍左右,所以不要太貪心泡太多。我一般會拿10粒左右的桃膠,配10粒皂角米煲糖水。再搭配不同的木瓜或雪梨,雪燕,銀耳,桂圓,紅棗,百合,蓮子,南北杏,或是奶來燉煮。桃膠,皂角米,銀耳最好分開泡,皂角米在泡的時候會變的黏稠,想清理方便,就多準備一個碗。

桃膠搭配木瓜或是雪梨的時候比較適合燉。而加銀耳的時候就要用煮的了。先把銀耳跟皂角米還有其他材料煮到出膠,小火一個小時左右,再放桃膠煮20分鐘。起鍋前加入冰糖調味。桃膠如果煮超過三十分鐘就會化成水了,所以不能煮太久。






如果加奶去燉也是最後10分鐘再倒進去,不然奶會分解成你不想看到的形狀。
