怎么选做菜用的酒?
我们做菜的酒通常有这么几种:米酒,白酒,黄酒,啤酒,味啉,葡萄酒等。
经典的搭配也各有不同,啤酒配鸭,红酒配牛尾,葡萄酒配海鲜,白酒醉海鲜,米酒和味啉配鸡肉等。
我们最常用料酒则是以黄酒为基底。黄酒由糯米或小米酿造,加上一些香料和调味料,则成为调味的料酒。
我在亚米买的这款宝鼎天鱼葱姜料酒,就是加了葱、姜、桂皮和焦糖,500 mL 售价2.19。
料酒富含氨基酸,加热后能产生花香果香面包香,从而去腥增香。
选料酒最关键就是闻。陈酿的黄酒香气很浓,隔着包装也有酒香。而勾兑的料酒则只有酒精的味道。
