【凉凉厨房】凉凉出品必是精品,酥皮月饼/酥饼/任何酥?!
大家好,吃货凉又上线了!一款简单精致的小零食教程送给大家!因为我不爱吃月饼里面的蛋黄所以没放。然后读书那会没钱买模具(俗称懒癌晚期不想买)就只做了酥皮的(后来还尝试做了老干妈馅的酥皮月饼用来整人,但意外的好吃)图文来自于读书时拍的照片,像素低请见谅!

酥皮起酥原理是一层油一层水如此反复形成的。所以制作皮的时候我们需要两种皮,一个水油皮(就是面粉里有水和黄油),一个是油酥皮(只有油没有水)
(以下我用“≈”表示最后根据手感额外添加或减少了一些材料)
水油皮材料:
中筋面粉(普通面粉)≈300克
黄油≈90克
白糖≈45克(我减了糖分因为不爱吃太甜的)
水≈120克(根据面粉吃水量调节)
盐≈10克(我就放了一小勺盐)

黄油隔开水融化↓

材料混在一起↓

我假装文艺的带了手套还拿着勺子搅拌(感觉太湿加点面粉,太干加点水)↓

最后还是直接上手揉面团,我喜欢这种“粗暴蹂躏”的感觉。成型后拿保鲜膜盖住醒面15-20分钟(这期间开始做油酥面)↓

油酥面材料:
低筋面粉≈220克
黄油≈120克
同样方法揉油酥面团(黄油隔水化开),太油加点面粉,太干加点油然后就盖上保鲜膜醒个10-15分钟↓

搓一块大小相等的水油面和油酥面,把水油面压扁包住油酥面。↓

包好后如下图

拿起擀面杖擀平成椭圆形↓

从下往上搓团后重复两三次,最后定型↓

压一下擀平↓

包上豆沙馅,刷上蛋液进烤箱。烤箱预热200华氏度(392摄氏度),我是烤了25分钟↓

成品出炉啦~

那是第一次尝试做,形状将就着看吧!味道没话说,凉了后更好吃!第一次看到起酥就觉得很开森很幸福啦!新手小白首制酥打卡完成!你们爱包什么馅都可以哒~
