亚米精選 # 亚米夜市 # 钵钵鸡还原成功!向叶婆婆发起挑战😬 操作简单,只是要准备的材料太多,并不是很快手。 准备材料: 必须:浓汤宝、喜欢的食材、一个大盆 选用:山椒(我用的jalapeño)、糖、藤椒油、花椒面 💁🏻‍♀️步骤如下: 1⃣️用hmart买的牛骨汤浓汤宝+500ml矿泉水调成高汤。投入半袋粉包,尝一下味道,觉得比平时吃的咸度重就可以了。如果做的量不多,粉包用一半就够了。我做的量比较大,所以用了一整包粉包+1L水。 2⃣️肉类以及不容易入味的食材需要先投入汤料。我用了鸡腿肉、去骨鸭掌(强烈推荐!!)、鸡胗、亲亲肠、鹌鹑蛋。所有肉类煮熟至断生即可(鸡胗切成薄片滚水下锅汆烫一下即可),起锅后放入冰水冷却沥干后再加入汤底。肉泡上后就可以加入油包了。(其实油包加入顺序没有太严谨,我比较喜欢让肉入一点盐味再加料) 3⃣️蔬菜我用了土豆、藕、木耳、海带结、豆皮。土豆和藕切薄片,所有蔬菜需要汆水,起锅冷水过一下保证爽脆口感。另外还可以加莴笋(忘记买了呜呜)、笋片,总之爱吃什么就放什么。不太推荐放带叶子的菜,可能会析出水份淡化汤料。 4⃣️所有菜泡上后尝下汤料看需要补加什么。个人觉得藤椒这个味道比较清淡,所以我额外加了一个切碎的jalapeño,一大勺藤椒油、一大勺花椒粉😂吃的时候我还配了干碟蘸土豆片😸 不过藤椒味钵钵鸡本来就是吃清香味,适合不太能吃辣的小伙伴。 💁🏻‍♀️做一大盆感觉可以够两个人吃两顿,之后还可以无限续菜,吃一周都没问题😹(毕竟店里的都是老汤,并不会天天换)吃完过后的汤一定要用来拌面条!之前红油的试过了超级好吃,藤椒也不会差! 📣一定要放的食材:去骨鸭掌、鸡皮(鸡腿上的皮就可以)、鸡胗、鸡心、鹌鹑蛋、土豆、藕片、海带(海白菜也可!我没买到)、笋片(最好是玉兰笋,总之要脆脆的没有太重的味道)、莴笋、木耳。 总之很满意了~会回购的~ os:有冰粉就好了…忘记买冰粉粉了,附上之前做的红糖冰粉和三鲜冰粉😭
