麻辣诱惑-简易版四川口水鸡的做法

今天来分享一道简易版--四川口水鸡的做法。


口水鸡是一道四川风味凉菜,口感集麻辣鲜香嫩爽于一身。之所以叫口水鸡,是因为有很多花椒让食客的嘴麻到流口水!也有说法是,看到这道色香味俱全的口水鸡,就让人口水直流。



【准备食材】


🍗鸡腿5个、冰块适量


🥗料酒、姜片、生抽、醋、糖、葱花、小米椒


🥄老干妈2勺、麻酱2勺、香油1


🥡花生少许、橄榄油适量




【具体做法】


1⃣️ 提前冷冻好冰块


2⃣️ 焯水、煮熟:锅里加适量清水,把鸡腿放进去煮熟,加几片姜、适量料酒,大约煮10-15分钟把鸡腿煮熟。用筷子戳一下鸡腿超后的地方,没有血水溢出来,就表示熟了



3⃣️ 过冰水:把煮熟的鸡腿马上放到冰块水里过几分钟,这样让鸡腿肉Q弹,超后吃起来口感很好



4⃣️ 切块:过完冷水的鸡腿切块,或者像我一样懒得切可以用手撕成小块


5⃣️ 酱汁:加入老干妈、麻酱、生抽、醋、糖、葱花、小米椒粒、香油搅拌鸡肉,拌匀后试试咸淡,不够咸可以再加点盐




6⃣️ 油泼鸡肉:锅里倒入橄榄油,把油烧热后,马上浇在刚刚搅拌好的鸡肉上,喜欢麻辣的宝宝可以在热油时候,加花椒煸炒炸出花椒味,然后一起浇在鸡肉上就可以啦


7⃣️ 摆盘:超后在盘上撒一些葱绿、花生碎,加分不少,脆脆的花生配上麻辣酸甜的口水鸡,让你的味蕾充满幸福❤️






【小贴士】


口水鸡做得麻辣鲜香,有两个要点:一是将鸡腿煮熟后,一定要过一下冰水;二是需要用干辣椒、 辣椒油等佐料来调制酱汁。


我做的这款只是简易版的,肯定没有正宗的四川口水鸡做得好,请轻拍哈~但是这个简易版的口水鸡也超级好吃,能在美国这村里自己做出来已经超满足啦!
