The traditional flavor here refers to this type of steak called "dry-aged beef". Unlike ordinary restaurants, there is really a giant refrigerator with a transparent room here. 对于在DTLA,特别是金融区的人来说,午餐带客户来吃一份这里的商务套餐,那是相当恰如其分的。环境美,服务佳,传统美式大餐,价位也很合理。

在美国这个嗜吃牛排的大国,如果你提供牛肉不够美味,这个餐厅可能永远都会被打入冷宫,当然如果你的牛排做的物美价廉,那么一定会成为让大家趋之如骛的地方。隶属于Patina旗下的Nick & Stef's Steakhouse坐落在洛杉矶的市中心地带,,除了环境优雅之外,这里的牛排也曾入选洛杉矶最佳,同时还曾入选过最佳紅酒餐廳(2011Wine Spectator Restaurant Award)。

餐厅就坐落在洛杉矶市中心金融区WellsFargo银行旁边,午餐时段许多金融才俊们都会前来享用价格非常公道的特价午餐,而到了晚上这里则变得浪漫而清幽,非常适合朋友间的聚会。

因为隶属世界上最强的饮食集团Patina旗下,所以决定了餐厅的管理非常的成熟,除了食物的美味度之外,服务更是将顾客奉为上宾,真的是让人觉得受宠若惊。

在经过了数月的重修装潢之后,2015年秋季这间牛排馆才重新开幕,餐厅的设计非常的具有现代化特征,但是牛排依旧采用的是传统的风味。(P.S这次的用餐时在装修之前,所以照片和食物都还是之前的)

这里的传统风味就是指这种名为“干式熟成牛肉” (dry-aged beef)做成的牛排。不同于普通的餐厅,这里真的有一间房间透明的巨型冷藏库,这里就是餐厅的灵魂之所在,因为这种牛肉必须保持在摄氏0度/华氏35和湿度85%的环境中,而建一个这样的冷库所花费的钱财自然是非常大,想来也只有这种“财大气粗”的餐厅才可以负担的起。

小知识:所谓的“干式熟成牛肉” (dry-aged beef)是指将牛屠宰清理之后,再按照不同位置进行切块再吊挂起来,(感觉是不是和国内的风干鸡有几分相似),经过长时间的风干之后,使得牛肉的香味更加饱和和浓郁。

因为所有的烘焙物都来自Patina旗下自家的烘焙坊,所以在免费供应的餐前包也需要彰显一下自家的实力,除了酸面包和黄油都属于上乘之外,最让人惊艳的则是一款 新鲜加热的约克夏布丁Yorkshire Pudding(传统美式的牛排馆都会以搭载这款面包为傲),轻软Q弹,软香迷人,淡淡的咸味让人非常的着迷。特别是中间凹陷部分的绵软和略脆的外围,好吃的恨不得想要厚着脸皮再要一枚。

既然来了这里,就一定要试试这里的桌旁沙拉。以生菜心为主要原料,加上凯撒酱、帕尔米森干酪、黑胡椒和热橄榄油打造而成,口感酸香清新,不过这种沙拉的确也不太可能好吃到飞天转地,总体还ok罢了。

不过这道菜的卖点在于服务,一步步的演示制作沙拉菜的流程,让客人很快就可以融入餐厅的氛围当中。

Oak & Mesquite Grilled Dry – Aged USDA Prime Hand CUT

餐厅的经理告诉我,这里的每一块牛排(特别是USDA Prime 和 angus beef)都位列全美的质量排行榜上的前2%,并且都是来自喂食天然草料的牛身上。为了保障最完美的味道,这里的牛排都是现点现切,你甚至可以透过玻璃,观赏里面一块块严格按照温度、湿度控制,经过整整28天才熟成的顶级牛排。然后再看着厨师用橡木和牧豆树(mesquite)的木柴来完成煎烤,据说这两种木材可以产生温度极高的大火,可以将牛排烤至最佳口感。

仅以粉色海盐和胡椒调味的精选的rib eye steak(肋眼排)在经过两种木材的烘烤之后,散发出天然的香气,而且每一口都肥嫩多汁,肉质丰弹,而带有筋膜的地方更是香弹可口,入口即化。

似乎来到这种主打古典口味的牛排馆就会想要忍不住想要试试看那里的蟹饼。以珍宝蟹为原料,口感鲜香,表层脆口;此处更是特别用两种酱来调味,让口味更加多远。奶香浓郁的白酱中还加入了芥末籽来加深脆口感,而绿色的葱酱更是可以为蟹肉提鲜提味。

香煎的三文鱼更是讲究一个原味,用刀子切下的一瞬间就可以听到咔磁咔磁的脆响,撒上几滴新鲜的柠檬汁,吃下来健康又无压力

SZECHUAN LONG BEANS Pink peppercorns

四季豆这种东西应该在美式的餐厅里很罕见吧,而且做得好吃的更是凤毛麟角。绿色的四季豆搭配粉色的小粒胡椒,光是在色泽上就已经足够吸睛了~吃一口脆度不错,而且还自带淡淡的甜味,整道菜肴酸甜合宜,还真算的上不错呢

Mac & Cheese

这种美国餐厅都不会做太差的Mac & Cheese 自然也不会太差,但是却几乎没有任何的记忆点。

Chocolate Guinness Bread Pudding (👍 )

用朱古力蛋糕打造的面包布丁还真的很不错~热乎乎温软不甜腻的巧克力蛋糕配上清爽的冰淇淋和爆米花片,绝对堪称是幸福香气的重要组成元素,浓郁的奶香一个劲的往鼻子里窜~

这家餐厅是Patina集团邀请小浣熊前去品尝的,所以和其他的不同,这餐没有自费。但是小浣熊一向都是很公正,这个请放心。总的来说,这家餐厅的在牛肉的处理上算的上是很用心的了,而且服务非常的到位,甚至比一些米其林一星的餐厅还要到位,这就是因为集团的管理有加分~配菜方面可能稍弱,价格在DTLA这个地方来说,觉得还算合理~窖藏酒水也相当的丰富
