叉叉这一年做过的美食——大阪烧(懒人快手)
大阪烧 又叫什锦烧或随意烧(其实就是什锦蔬菜煎饼…)
看这个名字就很随意…所以材料制作流程也是很随意的
比较快手 又营养均衡 过去一年里我还是做了蛮多次的

首先材料
必备的材料有:鸡蛋 面粉 卷心菜 木鱼花 还有大阪烧的灵魂大阪烧酱和蛋黄酱(美乃滋)
下图左边就是大阪烧酱右边是炒面酱 一般亚超都有卖 我一般买的这个牌子的 这个牌子的东西亚米有卖但是没有这两种酱 所以…亚米爸爸考虑一下呗?
当初我买的时候亚超里只有炒面酱 我看网上说这两个酱味道一样 所以就买了
后来炒面酱快用光了我买了大阪烧酱 尝了之后发现还是不一样的 并且!!!我更喜欢炒面酱
炒面酱是那种带一点点酸味(我开始以为是梅子)的 就是一平酱夜店炒面那个酱的味道 我觉得配大阪烧啊炸猪排啊都特别棒!!!
大阪烧酱也带酸味 但是没那么明显 而且甜一点

除此之外就随意发挥吧 加什么都行 肉类 海鲜 想吃什么加什么
流程:
✨鸡蛋打散 卷心菜切碎 肉类海鲜切小块(我一般加香肠或者虾)
✨水:面粉比例1.5:1混合均匀
✨加入鸡蛋液 拌入卷心菜碎 慢慢加 让整个面糊不要太稀也不要太浓
✨加入其他肉类
✨热锅加油 用油抹匀锅底 下面糊
这里面糊的厚度和大小是可以自己决定的 我建议不要太厚 不然中间难煎熟 也不要太大 不然难翻面 我就有一次做太大翻面没成功饼破了…
✨一面煎熟后翻面 翻面技巧:
1. 如果是大神会颠锅就直接翻吧 让它自由转体180度
2. 降饼移至锅边缘 大概伸小半个饼出锅 用锅铲接住 倾斜锅身 快速给饼翻面 这种方法适用于不那么大的饼
3. 如果一不小心摊大了 怎么办呢
✨首先把锅里的饼盛出来到一个大盘子里 朝向锅底的那一面朝向盘子底
✨锅里继续加一点油 把大盘子放在锅正上方 然后快速倒扣盘子——piaji 完美翻面
这三种无论哪种方法都讲究眼疾手快 不要畏畏缩缩大胆尝试吧
等到两面都煎好就可以出锅了 如果有加生肉不放心可以多煎一会
你问我饼破了怎么办?没关系还能补救
出锅后先在饼上抹匀大阪烧酱/炒面酱
然后用美乃滋画网格
✨一般美乃滋的开口较大 这样画出来的大阪烧风格十分粗犷… 所以我们可以先挤一些到保鲜袋里 然后给保鲜袋剪去一个小小角 就可以画出封面图那样的了
最后撒上木鱼花和海苔碎
如果饼有破损就多放点木鱼花盖一盖吧
下面这个大阪烧就是煎裂了的 是不是完全看不出来?
木鱼花遇热收缩 会不停地在大阪烧上跳舞哟~~~😝
