叉叉近日美食——黑糖脏脏茶

祖国各地大江南北都有了吧

上次做芋圆剩点木薯粉    考虑做啥的时候正好面面发了白玉抹茶   那就搓珍珠吧!!!

我比较喜欢红糖所以我搓的黑糖珍珠   顺便做了脏脏茶

这是成品之一~~   我觉得还蛮成功的



菜谱指路下厨房搜黑糖珍珠出来的Tinrry教你做黑糖珍珠鲜奶    教程特别详细甚至分析了很多种失败原因     我没有完全按菜谱配方比例来因为我那袋快用完的木薯粉只有94g


材料:


木薯淀粉(tapioca starch)   一般亚超有卖   一定要认准tapioca而不是其他任意一种淀粉

红糖/黑糖/黑糖浆   

  材料是不是很简单~


关于搓珍珠   之前看到菜谱大多是烧开的糖水到入木薯粉中   但是后来看到面面说粉倒入液体里成功率会比较高   这个菜谱里也是采取这种方法


过程:


黑糖80g90g混合   入锅小火烧开


糖水烧开后离火   150g木薯粉分两次对半倒入     第一次倒入后搅拌均匀再倒第二次    我这个木薯粉只有94g所以水和糖相应减了   但是后来发现还是缺粉于是新开了一包



在锅里的时候像太妃糖或者caramel一样hhhhh有点黏筷子


再加了点粉把面团拿出来



面团分小块   其他不用的用保鲜膜包好


小面团搓长条   切小块   然后搓圆   其实整个流程和做芋圆一样    只是块比较小   如果懒得搓圆直接小芋圆形状也OK



这个是切好的   上面手上是搓好的23333333




搓好的放到木薯粉里滚一滚防黏    然后可以装袋冷藏    毕竟随便做一批都蛮多的一次吃不完



然后煮珍珠啦~上面是我搓的下面是外面买的珍珠   后来煮的时候还加了芋头粉圆   也是一种珍珠   小一点紫色的    锅里加水烧开下珍珠煮15钟捞出来放入冰水里   这样比较Q~    外面卖的这种煮五分钟就够了




煮完表面会变半透明   还挺好看的~外面卖的就是黑色的




然后做黑糖浆珍珠   锅里倒水   大概350g   我是随手倒的  100g黑糖煮开    我这里加了黑糖浆和黑糖块    还加了蛮多的   烧开后下珍珠


这个里面最大的珍珠是手搓的   黑的是外面卖的珍珠粉圆   最小的是芋头粉圆    不过煮完都是黑糖味儿啦~~~~



转中火使劲煮    同时要用勺子不断搅拌直到糖水变粘稠    像这种    可以拉好长的丝🤣    我感觉我这个过于粘稠了    不过还可以~



珍珠和糖浆倒入玻璃杯或者透明容器   拿勺子在杯壁上瞎糊   像这种👇🏻




倒入冰牛奶   完工!




大前天一共做了六杯    不过只拍了我自己的北极熊小杯子和上面这个塑料杯23333333




超级好喝!!今天我还要做!!!!!!!!!
