小吃货厨房 | 川味厨房美食打卡 每一个都是家的味道🌶


▪️说实话我真的不是一个很克制的人 中午到下午还姨妈痛到要死不活 吃了两片止痛药才勉强撑住了考试!!!! 晚上一回家就又开始弄了辣辣辣的菜 真的忍不住啊! 学了一天就喝了一杯水 (痛到想吐也不敢吃东西)~回家之后看到买了两天的酸菜就很想念酸菜鱼了 于是就有了这一桌辣菜!


▪️酸菜鱼真的是让我想到就开胃并且想流口水的菜 真的超级无敌怀恋妈妈做的酸菜鱼味道了!! 于是自己就简单的复刻了一波 这也算是我第一次做酸菜鱼 结果意外的成功 而且没有用任何的酸菜鱼调料就能做出汤香味美的川味酸菜鱼!

🔺首先准备龙利鱼片(尽量切很薄) 金针菇1把(提前煮熟) 酸菜1个(切细丝) 4 青花椒适量 干辣椒适量 鸡精+盐少量 香菜

🔺制作方法特别简单 鱼切薄片加芡粉以及少量料酒 白胡椒腌制! 可以在加一些油 鱼片会更加的嫩滑!

🔺起锅热油 下蒜和花椒 干辣椒爆香 然后加入酸菜炒香 一定要将酸菜里面的水分全部炒出来炒香!!非常重要!

🔺然后加开水煮开 同时加入金针菇~煮开后慢慢下鱼片 鱼片很薄 烫一下就好了! 出锅的时候撒入少量的鸡精和白胡椒粉提鲜!! (盐可以不加 因为酸菜已经很有味道了!) 最后撒上香菜就大功告成了! 酸菜鱼味道超级赞 汤浓有白非常的鲜 鱼片超级嫩爽入味 金针菇也是超级好吃 再加上整个都是酸酸辣辣的超下饭!


▪️另外两个菜就是我昨天做的川北凉粉 还是以前同样的拌法 超级麻辣诱人的开胃凉菜! 当然还有虾皮烧冬瓜 清淡又有 “肉感”简简单单又好吃的家常素菜!
