Potatoes can be cut into rolling blades for better flavor, and onions and green peppers are easy to cook and cut into large pieces and are not easy to loosen. The amount of ingredients is prepared according to two people. It would be more fragrant if there are garlic slices in the meat. My family used minced garlic instead because they ran out of garlic.

- 3 boneless chicken thighs, cut into large pieces
- 6 pieces of ginger (3 for blanching, 3 for frying)

- 10 red peppers
- 1 cinnamon bark
- 2 aniseed
- 2 bay leaves
- 1 tablespoon minced garlic

1. Add cold water to a pot, add chicken, add ginger and cooking wine. After the water boils, blanch the chicken and drain the water.
2. Add oil to the pot, add rock sugar to fry the sugar color over low heat, wait until the sugar turns light brown, then add the chicken, stir fry the chicken until the chicken is brown, add the seasoning. (I added light and dark soy sauce and Pixian Douban to increase the flavor of the sauce, you can also leave it out)
3. Add hot chicken stock (or hot water) to the pot until the chicken is slightly covered, bring to a boil over high heat, then turn to low heat, cover and simmer for 8-10 minutes.
4. Add potatoes, simmer for about 5 minutes, close the juice over high heat, add green peppers and onions, and season with salt before serving.
