最近正读史书,于是顺便附庸风雅,查了下本草纲目的胡麻条目,以上是我ctrl+c的成果。正好趁着这篇文章,就想说说芝麻。


芝麻脂含量高,可做油料;有食疗功效,例如有古籍认为其可生发(我的发际线高兴得又往后退了一寸);网络上称其亦可乌发(可能是因为看黑芝麻长得黑吧)。古时也有俗传说胡麻须夫妇同种则茂盛,关于此梗《本事诗》有诗一句,被我用做此文标题。


然鹅blah了一堆并无卵用,毕竟喜欢某食物的原因只可能是因为它——好吃啊。



芝麻味浓、香。可做香油、麻酱、芝麻糊、芝麻糕等。也有芝麻粉、炒芝麻之类的既不算调料也不算成品的尴尬半成品。


生芝麻和常见芝麻制品我就不再赘述,各家有各自的菜谱。这些半成品一般用来做糕点等,但其实也能直接入口。那段时间,为了一包芝麻粉,一包炒芝麻,我把玉米粒粥、玉米片粥、玉米渣粥、玉米面粥挨个喝了至少两三遍还没有喝腻。



炒芝麻在入口前就散发着一种淡淡的,炒制的干燥气味。之前热气的烘烤将谷仁内的水分蒸干后,那些油脂间的味道就已崭露头角。就着一口玉米粥,磨牙碾碎谷仁的时候,浓烈的芝麻香气突然迸发出来,带着一种幼细润滑的油脂感,弥漫在口腔中,和玉米的味道混合在一起,却又分出高低层次。明明没有任何调味,但两种谷物的香气就能让人回味无穷,甚至能尝出丝丝清甜。


芝麻粉与炒芝麻异曲同工,那种细滑的油脂感也还在。只不过提前磨碎,省却咀嚼一步,口中不会留有破碎的芝麻仁。虽然香气也被提前释放,但芝麻香气本就很浓,损失并不大。


与美的芝麻糕有些像以上提到的芝麻粉:芝麻味浓,甜度低,不会齁人,没什么额外添加的味道;糕点质地软糯细腻,入口即化。但也有些干,有些油,吃多了估计会腻。个人建议可以配些茶,红茶这种传说中去油去腻的为佳,当作茶点。


包装很精致,很文艺,盒子内外都做了设计。并且糕点一块都没有碎,这点很好,毕竟这个质地的糕点很容易碎成渣,尤其还是快递过的。具体的我没有数,但一盒大概十六七块左右。价格也可以,做礼物或自用都合适。放在办公室或者书包里,休息时饿了垫一下肚子也很方便。
