简易菜谱:

1. 泡海带,个人经验至少一个小时。泡好之后将海带剪成合适的大小,可以自己打结也可以不打结。

2. 排骨冷水入锅,煮开去沫。我是在whole foods买的pork ribs,可以请店员切成小块。

3. 换一锅清水,加入排骨和海带(还可以按个人喜好加入土豆胡萝卜等等),大火煮沸换小火,炖煮。两磅的排骨我用铸铁锅炖了两个小时,可以达到骨肉分离的效果,非常烂。

🍱1. 牛肉饭


简易菜谱:

1. 1lb的牛肉冻好,切成火锅涮肉的样子。我是在amazon上买的切肉的机器(村里没有地方买切好的)。水烧开放牛肉,煮熟捞出沥干。

2. 洋葱半个,切粗丝。

3. 小碗中调制酱汁:盐一小勺,白糖两小勺,淀粉两小勺,蚝油两小勺,生抽一小勺,味霖两小勺。加入适量水,搅拌均匀。水的量,我觉得能够让所有东西都溶解就可以啦。

5. 将牛肉和洋葱均匀浇在米饭上。

注:羊肉也可以这么做。

注:白洋葱、紫洋葱都可以。

注:一般牛肉饭会配青菜,西兰花或者小油菜焯水都可以,就不多说啦。


🍱2. 寿喜锅





简易菜谱:

1. 准备食材,包括但不限于:火锅牛肉,豆腐,粉丝,白菜,面条。

2. 热锅,平底锅炒菜锅都可以,放一小块黄油至融化。牛油,普通的炒菜油也可以。

3. 转中火,在锅中央放牛肉,同时放入适量味霖和酱油(比例大概是2:1,依据个人喜好放)。用日式酱油的原因是日式酱油比较甜,味道和中式酱油不一样的。

4. 牛肉差不多全熟之后在牛肉旁边一圈摆上豆腐粉丝等所有菜,这时可以再加一遍味霖和酱油。盖锅盖,焖煮一会,就好啦。



注:以上所有简易菜谱均非最传统、最全面的做法,而是偏向于食材易得、节省时间的快手菜。

注:中美火力不一样,尤其非天然气的电磁炉有时候火力不足,需要根据自家条件调节火力。
