I've been to Huoshaoyun three times   I ordered braised chicken three times   < span class="s2">really delicious   It's also really spicy


The proprietress said in her introduction on Weibo: Huoshaoyun is a typical cuisine of Dehong Prefecture in southwestern Yunnan. It is so spicy that the left foot jumps with the right foot.


So the slightly spicy level of the braised chicken has reached the level of mild to moderately spicy braised chicken   and the mild spicy has exceeded the medium spicy level

And then there's the chicken   I usually use boneless chicken thighs(convenient and tender)   Bone-in chicken nuggets also work

2.The most used flavors are actually garlic and oyster sauce

叉叉这一年做过的美食——鸡肉篇2(油焖鸡)

"好吃到让人流泪的油焖鸡"   这个是火烧云老板娘的原话


光是看着这个图我的口水就又快滴下来了😍

不知道大家有没有听说过或者吃过火烧云   是一家很正宗的傣族(云南)风味菜馆   开在北京   有三家分店   去年又来到了上海   而他们家的招牌   就是铜锅油焖鸡了


我去过火烧云三次   三次都点了油焖鸡   真的很好吃   也真的很辣


老板娘在她微博置顶介绍里这么说:火烧云是典型的滇西南德宏州口味菜系,重小米辣重香料重调料辣得左脚换着右脚跳


所以油焖鸡的微微辣的程度已经到了一般黄焖鸡微辣到中辣的样子   而微辣已经超过了中辣的程度


但是它就是让人欲罢不能!!!配饭根本停不下来   每次都是吃到走不动路

看起来是不是十分诱人???   想配上三大碗白米饭吃个酣畅淋漓???


没问题!!!自己在家里也可以做   而且步骤也没有十分繁琐


这个做法是我在下厨房上看到的   发布的人说是火烧云老板娘在电台里分享的    本来下厨房里还有另一个油焖鸡的做法   现在只剩下了老板娘的那一个   照着那个菜谱一步步做出来   基本上和火烧云里吃到的八九不离十啦😆   下面来介绍流程


(emmm…刚刚搜了一下下厨房里面现在油焖鸡菜谱还挺多🤣我看的那个就是叫油焖鸡   一个字都不多一个字也不少   评分很高)




下图几乎是所有原材料了   葱姜蒜   小米辣   西红柿   土豆   柠檬草(就是香茅草  下图没有因为当时没有找到)   其实还有丝瓜   但是我们这边亚超没有丝瓜卖(真惨…)


然后就是鸡   我一般用去骨鸡腿肉(方便还肉嫩)   用带骨的鸡块也可以


调料只需要一种   那就是蚝油    用量比较大



姜蒜切碎   蒜的需求量也比较大   可以早点切   切好后放在盘子里让它们与空气充分接触氧化   这样更香~


葱和小米辣也切碎   备用   整个流程大致4


1.熬酱   锅里放油   多放点   然后按1: 1的比例放姜蒜末 : 柠檬草+小米辣   炒一炒   然后加蚝油   用量是刚刚加入所有东西总和的两倍   可以加一点点牛奶或者椰奶提味   这样做出来的油焖鸡会带有微微的奶香   开大火不停搅拌至明显粘稠度增加   盛出备用


2.腌鸡肉   热锅冷油加蒜末  炒鸡肉到七成熟(大致全部变色)准备出锅   出锅前加入两大勺刚才熬的酱   拌匀让鸡肉充分接触到酱料   盛出静置   腌制30分钟使鸡肉入味


3./炒土豆   土豆切块用水泡五分钟   然后连着泡土豆的水入锅大火煮到七成熟   出锅冲凉直到没有烫热感


4.混合   等鸡肉差不多腌制好   热锅冷油加蒜然后下土豆   加两勺酱翻炒   蒜香明显时加入腌制好的鸡肉   鸡肉基本熟时加入切块的丝瓜   丝瓜熟时加入切块的番茄埋入锅底   翻炒准备出锅像这样↓↓↓   番茄是用来提味的




5.出锅   撒上葱花和熟芝麻   开吃😆




有几个注意点  


1.有一定要多放   其实我没有放太多油   但是老板娘的图里面锅里鸡肉土豆上就是厚厚一层油   而且因为叫油焖鸡   全程是不能有任何水加入的


2.用到的最多的味道其实就是蒜和蚝油





真的特别好吃   我第一次做抓了两个同学做小白鼠   结果就一个菜他俩吃了我一锅电饭锅的饭(3杯米的容量)   我自己做饭带去学校当"工作餐"   带油焖鸡的时候   带的饭的量也比平时的多😝


昨天同学去亚超给我带了小米辣和大瓶蚝油今天我去超市补了蒜   明天做油焖鸡啦!!!((٩(´͈`͈)۶))



油焖鸡是我做过的所有菜里我认为的top3之一了(本来是top1但是最近牛舌饭横空出世了🙈地位有点点危险)   大家有空也可以自己试一试   会打开新世界的大门的🎉
