拌粉&瓦罐汤


我知道很多人不知道,但是说起嗦粉,我们江西也算是专业的了


我曾经是每天都要吃拌粉的人啊


来到这片异国他乡,不能天天嗦粉可是我一直怨念的了,螺蛳粉完全不能满足我


因为,粉,拌了才好吃!😋


这篇晒单其实就分享一下我的拌粉方子


但我们拌黑粉!(ok 其实就是蕨根粉啦


标准搭配:

花生米(精华!)

葱末

蒜蓉(精华!!)

辣椒油

蚝油

生抽&老抽

甜面酱(一点点)

十三香

胡椒盐

咸菜

芝麻油(精华)

白胡椒

剁椒



江西米粉/麻姑米粉,煮十分钟,冲凉水,然后趁着余温加料进去

然后拌在一起,就酱


超级好吃

蕨根粉口感稍显奇怪,有一点点涩感,所以其实最好是做酸辣口味的


就在标准配方里加入更多的蒜蓉和小米椒剁椒,还有香醋啦


最近发现一个精华,袁鲜的辣椒油,拌一拌,巨香!






关于花生米


其实炒花生米做法及其简单,而且贼香,就是那种隔壁小孩🧒馋哭的那种香

花生米洗一洗别洗太久,会脱皮的

晾干!有一点水珠子都爆你一脸的啊姐妹们


冷油下锅翻炒,最好是颠锅!容易让油均匀分布!耐心点,中火翻炒,油放的少但是火不大就不会焦


炒到微微发黄就关火余温翻炒,千万不要金黄再关火很容易糊的


接着点睛之笔!白酒!1/8勺!加进去!(我用的伏特加)继续翻炒


没有也可以不加啦


翻到伸手进去抓一颗出来不会烫到拿不住就好啦


然后撒多点海盐进去,不停的翻啊翻


海盐很大一颗,不容易化,但如果你用细盐还是要等到温温热再加盐比较好


超级好吃😋,可能炒着炒着就自己磕光的那种


其实用烤箱也可以,大家见过超市里那种喷的油对吧,没有见过就去找找


洗过晾干的花生米,均匀的喷上油,拌好,放进烤箱350f/180c,烤八九分钟,然后关掉烤箱让预热继续烤,等个20分钟拿出来撒盐就很好吃啦


这个喷射油很好用,减少油的用量更健康


不要选者喷射黄油不然可能味道怪怪的🤨
