【Leek Box】Simple and Delicious Homesickness

I have eaten a lot in the United States for many yearsInternationalization Gourmet Cuisine (Vietnamese Noodles, Mexicantaco, Thai food, etc. are allInternational food😄), but occasionally I still think of the unique delicacy of my hometown in my memory, and I still think about it day and night. I remember when I came to the United States alone more than ten years ago, without my family and friends, I saw leeks sold in a supermarket, and suddenly I wanted to eat the leeks box made by my mother in my childhood memories🥙.However, where can I sell Northeastern pancakes? (Some Chinese supermarkets already sell Northeast Pancake span>), the Northeast Small Restaurant sells leek boxes made of flour, like a pie, but not the kind of taste I want, I just want the thin pancake crust I remember The inside is full of fillings, take a bite, the crispy outer skin is matched with the fragrant filling, and the mouth is full of fragrance~







 Later I saw the supermarket freezer and found spring rolls Leather for sale! Thought: Isn't the crust of fried spring rolls as thin and crispy as pancakes? ! Wow, I finally bought food that can satisfy my cravings! After I bought the ingredients I needed, I went home clumsily and tried it myself based on the taste of my mother's cooking. I ate it very satisfyingly and was very happy~~ Now I look back on the original self, which is both pitiful and gratifying……😂😂


I happened to have leeks at home today, so I thought of my little story and shared it. I hope you don’t mind my long-windedness~ This snack is not a healthy snack, after all, it has oil content. But don't care so much about eating occasionally😁

Leek Box——Kaishou Spring Roll Leather Version






The above is the Northeast pancake I ate as a child. The picture comes from the Internet. Here is the spring roll crust to make today. The stuffing ingredients in the original leek box are: leeks, eggs, fine vermicelli, and dried shrimps.


Because the children love to eat meat, today I am making a modified version of the meat and leek box. The ingredients are: leeks, eggs, minced meat .











❶ Wash and mince the leeks

❷Crack the eggs and add a little salt, fry the eggs until cooked, and set aside for later.










 ❸Add a little salt and pepper to the minced meat Powder, cooking wine, chicken essence (can be added or not), marinate for a while, then fry and serve for later use.

❹ Put all the ingredients to be used in a container and mix well. You can increase or decrease the seasoning amount of [salt] according to your favorite taste.If you like to eat with sauce later, it is recommended not to be too salty, rather bland than salty.






❺Remove the spring roll skins and cover them with a clean food damp cloth to prevent drying.











❻Put in the mixed filling and fold the crust, and fold it as you like, even if you roll it into spring rollsOK La😂😂It can be sealed with water. I like to use one layer of crust, the thinner it is, the more crispy it is. If you like it thicker, you can put 2 layers, too much The layer taste is different.






❼Put a small amount of oil in the pot, it is recommended to spray with oil, spray evenly without worrying about too much oil, or dip a small amount of oil on paper and smear the bottom of the pot. Fry until the crust changes color..If you are too concerned about the oil, try the oven.

【韭菜盒子】简单又美味的思乡情怀

来美多年虽然吃到不少国际化美食佳肴(越南面,墨西哥taco、泰国餐等等都是国际美食😄)但偶尔还是会想起那记忆中家乡独有的美味,依然会馋得我日思夜想。记得当初十几年前只身一人来美,没有家人朋友陪伴在旁,某次看到超市卖的韭菜,突然就很想吃小时候记忆中妈妈做的韭菜盒子🥙.可是,哪里有东北煎饼卖呢?(现在部分华人超市已经有卖东北煎饼了),东北小饭馆卖的是面粉做的韭菜盒子,像馅饼一样,但不是我要的那种味道,我就想要记忆中薄薄的煎饼皮里面满满的馅料,一口咬下去,酥脆的外皮搭配着香浓的内馅,满口留香~







 后来看到了超市冷冻柜发现有春卷皮卖!想到:炸春卷的卷皮不就像煎饼一样薄又脆?!哇,我终于买到了可解馋的食材!买好需要的食材后回家笨手笨脚的凭记忆中妈妈做的味道自己试做了一番,吃的很满足,很开心~~现在回想当初的自己既可怜又欣慰……😂😂


今天家中刚好有韭菜就想到了自己当初的小故事,就分享出来了,希望大家不要介意我的啰嗦哈~这款小吃不算健康小吃毕竟有油分,但偶尔吃吃还是不要计较那么多啦😁

韭菜盒子——快手春卷皮版






上面就是我说的儿时吃的东北煎饼,图片来源于网络。下面就是今天要做的春卷皮。原版的韭菜盒子内馅食材为:韭菜、鸡蛋、细粉丝、虾皮。


因为孩子们爱吃肉所以今天我做的是改版的荤韭菜盒子,食材为:韭菜、鸡蛋、肉末.











❶把韭菜洗净切末

❷把鸡蛋打散加入少量盐,先把鸡蛋炒碎炒熟,放在一旁待用.










 ❸把肉末加入少量盐、胡椒粉、料酒、鸡精(可加可不加)腌制一会后炒熟盛出来待用.

❹把所有待用的食材全部放入一个容器拌匀,可根据自己喜欢的口味再来增减【盐】的调味量.如果后续喜欢沾酱料吃,建议不要太咸了,宁淡勿咸.






❺把春卷皮拿出后用干净的餐饮湿布盖上,防止干掉.











❻放入拌好的馅料折叠起饼皮,喜欢什么样子就叠什么样子,就是卷成春卷也OK😂😂用水粘合封口即可。我喜欢用一层饼皮,越薄越酥脆,喜欢厚点的就放2层即可,太多层口感有差异.






❼锅中放入少量油,建议用油喷,喷的又匀也不担心太多油,或者用纸沾取少量油份涂抹锅底即可。煎至饼皮变色即可.要是太介意油分的话就试试烤箱吧. 






【香酥韭菜盒子完成啦!】

饼皮非常非常的酥脆,像刚炸出的春卷那般香酥,但又比春卷更好吃!!韭菜肉馅也很香.

韭菜这东西非常奇怪,新鲜的时候总觉得臭但做熟就没有臭味反倒很香~推荐给不介意韭菜味道的朋友们.
