Chongqing noodles need fresh alkaline water surface

Can't get it in New York so I used whole egg wonton noodles instead

Because wantan noodles are also made with alkaline water, it is a bit similar~ 

The soup base needs to use the stock to taste more delicious

I didn't buy it specifically🐔and big bone broth

I made a simple soup with dragon tail bones and chicken feet at home~ 

The soup is also white and looks very appetizing!

🍜假装自己在重庆——好吃到没朋友的重庆小面在家做!

今天妈妈👩🏻发来消息问我重庆小面在哪里🧐

不用多说我已经猜得到她是想让我做给她吃🌝

虽然我没有去过重庆也没有吃过地道的小面~ 

但自己动手丰衣足食的能力还有的哈哈哈!🙈



 





重庆小面需要新鲜的碱水面

纽约买不到所以我用全蛋云吞面代替

因为云吞面也是用到碱水制作有点类似~ 

汤底需要用到高汤味道会更鲜美

我没有特意买🐔和大骨熬高汤

就用家里的龙尾骨和鸡爪熬了简易的高汤~ 

熬出来的汤也是白色的看着也是很有食欲呢!

把鸡爪和龙尾骨焯水洗净放入砂锅内加水

料包里放一些姜片葱结几颗花椒和香叶

大火煮开后转小火熬煮一个半小时就~ 

如果不用高汤开水也是可以的哦😊



 




准备高汤的同时来制作辣椒油🌶️

·两三瓣大蒜和一片姜切成碎末越细越好

·碗里倒入两勺辣椒粉和一小勺十三香和花椒粉

·锅里小火热油放入香叶桂皮八角花椒炒出香味

·用漏勺过滤掉香料并将热油倒入碗中快速搅拌

·加入一小把白芝麻搅拌均匀稍微放凉

·接着加入一勺酱油和陈醋一点盐、糖和鸡精

·超级无敌美味百搭的汤底精华都在这里啦~ 



 






 



3⃣️步炒肉躁!🤤

·肉沫我用的五花肉把比较肥的部分切一点下来

·将五花肉绞碎后加入适量酱油蚝油十三香搅拌

·放置10分钟入味让它静静的思考一下人生吧~ 

·锅中小火倒入肥肉翻炒出油份将肥肉挑出来

·放入腌制好的五花肉翻炒再加入一勺老抽上色

·我个人喜欢炒制比较干瘪的状态会更香~ 

·肉躁单独吃都超级好吃的但是记得要吸油哦!


 




4⃣️ 煮云吞面和青菜🥬

·云吞面的碱水味很重需要煮两次

·第一次水滚后加入面条十几秒后捞出来

·重新换一锅热水♨️把云吞面煮熟即可

·煮青菜🥬的时候滴几滴油保持好看的绿色



 




5⃣️ 组装面条🍜开吃!

·将自制的辣椒油全部放入大碗中

·浇上适量的高汤放入面条、肉躁和青菜

·按个人口味放入炸黄豆或者花生米

·推荐黄飞鸿花生米超香还有花椒和辣椒颗粒

·最后在撒上少许葱花一碗重庆小面就诞生啦!
