对于那些来不及买月饼或者像我这样🌝不舍得花钱买月饼的人,不如今年过一个特别点的中秋节🎑,自己做月饼吃吧!


做月饼,馅料是灵魂部分👍这篇文章就来分享奶黄馅的简单做法~



 



首先备好材料:

🥚鸡蛋黄2个;

🥛牛奶 65g

 🌟澄粉 25g

🌟白砂糖 20g




 



第一步:

把砂糖倒入鸡蛋黄里,搅拌均匀,直到白砂糖全部融化为止




 



第二步:

把牛奶🥛倒入蛋黄里。一开始慢慢倒,一边倒一边快速搅拌,到后半段就可以快速倒入,继续搅拌均匀




 



第三步:

澄粉过筛。准备一个不锈钢大碗,澄粉过筛之后倒入不锈钢碗里。




 



第四步:

把蛋液倒入到不锈钢碗里面。蛋液分三次倒入,而且每次都要搅拌均匀之后才可以倒下一次,直到倒完蛋液并混合完全




 



第五步:

将切块的黄油倒入蛋浆里,并隔水加热。

这个步骤比较有意思了:先煮半锅水,然后调成中小火,再把不锈钢碗放在锅上面,让水蒸气来弄熟蛋浆。

一边加热一边搅拌直到黄油融化。




 



第六步:

隔水加热煮熟奶黄。

黄油融化后静置半分钟左右,用勺子🥄刮碗底,把底部已经熟了的奶黄刮起来;然后再等半分钟,再用勺子把底部熟了的奶黄刮起来。之后就不停的刮,搅拌,直到蛋浆已经全部变成固体状,而且有点变硬结块的迹象了,马上关火,取出不锈钢碗。




 



奶黄完成

等它稍微变凉了就可以放冰箱冷藏一个小时,取出就可以用来包冰皮月饼啦!
