叉叉这一年做过的美食——珍珠圆子和肉酿青椒(猪肉末篇)

本湖北人最爱的湖北菜之一——珍珠圆子   来美国后在家做过两次   好吃(˶‾᷄⁻̫‾᷅˵)   


另外我也很喜欢吃虎皮青椒   而它的进阶版   青椒酿肉   更是一次get双份满足    


而且这两个菜的制作过程也没有特别复杂  虽然都不辣但是比较适合大众口味   既适合朋友同事聚餐也适合一人独享~   下面我就来介绍一下它们的做法

还在蒸屉里的珍珠圆子   因为拍的时候还在腾腾冒热气所以糊了一点点   冬天的时候做上一屉揭开盖子的时候满屋子的香气和热气真的超享受😆



材料: 糯米  猪肉泥(ground pork)    生粉 


过程:


糯米提前洗净   并用清水浸泡两小时


其实做珍珠圆子最麻烦的是剁肉泥   但是由于美国超市都有现成的猪绞肉泥卖   所以省掉了很麻烦的一步


姜切碎   加入肉泥中   混匀


加入少量盐和生粉   珍珠圆子主要吃的是咸   并不需要很明显的咸味儿   所以盐不需要放多


用筷子朝一个方向搅拌肉泥至肉泥变得"劲道"   就是有明显阻塞感   腌制半小时


捞出泡好的沥干水分


取一小团腌好的肉搓成球形   放入糯米中滚上一圈   放入铺好蒸布的蒸屉中


所有圆子做好后大火蒸15分钟就可以出锅啦   出锅后可以撒上葱花做装饰   也增添一丝香味~

虎皮青椒好吃   肉酿青椒也好吃😝




需要的材料只有尖椒/青椒和肉末   调味料可以根据自己喜好配置


制作流程:


肉末加一点点生粉一点点盐一点点酱油后搅拌上劲   这样口感会更加Q


青椒/尖椒洗净去籽   这里青椒/尖椒一般的美国超市都是有卖的的   我最常去的是foodlionWal-Mart   都有得卖   我试过两种椒做青椒酿肉   一种是深绿色比较大的一种是上图这种颜色浅一点的   都不错   它们的长相是那种辣椒"身子"不是全直经常会有一点点"拐弯"   大家要注意别买成墨西哥辣椒就ok😂   去籽可以直接把青椒头""   或者切掉头再用小刀去籽


把肉泥塞进青椒中   热锅放油   把青椒放入炸至表面出虎皮纹   这里表皮黑了也没问题因为吃的时候可以把表皮撕掉   如果担心肉泥没熟就多煎一会   觉得差不多熟了之后盛出青椒


调调味汁:锅里还剩一点油   把葱蒜爆香后倒入酱油   一点点醋和糖(醋和糖用来提鲜)   大火煮开   如果觉得味道重可以加一点点水   


下青椒煮两分钟    期间可以翻面让它均匀入味   然后就可以出锅啦😝   


一口咬下去肉汁四溢   肉末的汁水都被封在了青椒里   真的是下饭神器!!!!


我一个人吃的话一般一个就足够了因为这个青椒还挺大的   同学聚会也做过一大盘~大家都很喜欢
