【Sanwu Eats for One】Basil Green Sauce

Also enjoy a person's exquisite life when you are single.

Apart from the bedroom, my favorite place to stay is the kitchen.

And the kitchen is about 80% of my exquisite life.


The basil on the windowsill naturally grows vigorously, just to reward myself with a green sauce.



【Green Sauce Recipe】Adapted from Gennaro
1 garlic
Pinch of sea salt
Pine Nuts 15g
Basil 40g
Olive oil 80ml
Parmesan cheese 80g

step:
Add garlic, pine nuts, and sea salt to the food processor and smash it
Add basil leaves and break them up (not too long)
Add olive oil and stir
Add grated Parmesan cheese (use a fine-mesh grater) and stir briefly
Finally, use the food processor to smash for a few seconds, done



TIPS:
* If you don't mind, you can leave the basil leaves unwashed. If they are washed, they should be dried, otherwise the preservation time of the green sauce will be shortened;
* I only used parmesan cheese in this recipe, you can also add some pecorino to mix it together;
* You can add a little lemon juice to taste, and the taste will be much fresher (this is also recommended by Gennaro);
* The prepared green sauce should be refrigerated and eaten as soon as possible. Or you can choose to pack and freeze;
* Pasta, sandwiches, salad dishes… are all great ways to use up green sauce.



Due to the obsession with handmade pasta and the lack of Oubao at home, the finished green sauce is refrigerated in the refrigerator.

【Sanwu一人食】罗勒青酱

单身的时候也要享受一个人精致的生活。

家里除了卧室,最喜欢待的地方就是厨房。

而厨房大概承包了我精致生活的百分之八十。


窗台的罗勒自然生长得很旺盛,正好赏自己一份青酱。



【青酱菜谱】改编自Gennaro
大蒜 1个
海盐 一撮
松子 15g
罗勒 40g
橄榄油 80ml
帕玛森奶酪 80g

步骤:
在料理机里加入拨好的蒜、松子、海盐,打碎
加入罗勒叶,打碎(时间不要太长)
加入橄榄油稍搅拌
加入帕玛森奶酪碎(用细孔的擦丝器擦),稍搅拌
最后再用料理机打碎几秒,done



TIPS:
* 不介意的话罗勒叶可以不洗,如果洗了要晾干,不然会减少青酱保存的时间;
* 这个菜谱里我只用了帕玛森奶酪parmesan,还可以加入部分pecorino混合一起;
* 可以再加入一点柠檬汁调味,感觉口味会清新很多(这也是Gennaro推荐的);
* 做好的青酱冷藏保存,尽快吃完。或者可以选择分装冷冻起来;
* 意面、三明治、沙拉料理…都是消耗青酱的好方法。



由于对手工意面的执着,以及家里没有欧包了,做完的青酱冷藏在冰箱了。
