金针菇肥牛
















肥牛金针菇卷的做法

1. 将金针菇洗净,切去菇脚部分,沥干水份备用

2. 肥牛片放室温稍解冻一下

3. 取一肥牛片,把一小撮金针菇卷起来

4. 依次用肥牛片把所有的金针菇都卷起来

5. 平底锅开大火烧热,再转回中火,把肥牛金针菇卷直接放平底锅内煎

6. 煎至肥牛变色,再转另一下,均匀的把整个肥牛都煎透变色即可

7. 将一大匙蚝油放在碗内

8. 加入1小匙白糖

9. 加入清水用筷子搅拌均匀

热锅,将搅匀的蚝油汁倒在锅上,开大火煮沸


然后直接淋在肥牛金针菇卷上即可

肥牛金针菇卷的小贴士

1、肥牛稍解冻一下,这样卷金针菇的时候可以卷得紧些。 

2、金针菇也可以放锅内灼一下,或是放微波炉里叮几十秒,不过你如果赚麻烦的话,直接用肥牛卷起来煎也是可以的,不过时间要煎得久些,我用的就是直接法。 

3、煎的时候,平底锅内可以放少许油,也可以不放油,因为在煎制的过程中,肥牛会析出小部分的油脂。 

4、调芡汁的时候,因为蚝油本身就带有咸味,如果口味轻淡的,就不用再加盐了。 

1. 5、如果喜欢较稠的芡汁,可以煮沸蚝油汁的时候,用生粉加少许清水,调匀倒在蚝油汁里,搅匀即可。
